We invite you to meet us at Domaine Bertrand-Bergé with an authentic family, deeply attached to its terroir. Located between Languedoc and Roussillon, Domaine Bertrand-Bergé is established in Paziols, a charming small town in the Aude region. It is accessible through pretty winding roads. More than six generations have succeeded each other, worked and helped to build the property. The Domaine Bertrand-Bergé now covers 36 hectares. During the 19th century, Jean Sirven, the great grand father of Jérôme Bertrand, had developed the direct sale of the domain’s wine and won the gold medal at the Universal Exhibition of Paris in 1900, demonstrating the quality of the domain’s wine. He had opened the way and the Bertrand family, to this day, continue the family tradition and works with passion and humility to constantly develop quality.

«We focus on making the vines feel good in this environment. We are convinced that in order to obtain the quintessence of the terroir, the vines must be well-worked and naturally flourish in the beautiful landscape.” Since the 2011 harvest, our estate is grown in organic farming’s, certified by Ecocert. Our vines are all plowed, fertilized by an organic amendment and treated with products without synthetic molecules and we use very low doses of SO2. Out of respect for our vines, our employees in the vineyards and our costumers, this requirement has become obvious and a duty towards our children, who will succeed us. We also planted olive trees, truffles, and we will rebuild the casots and restore the stonewalls. All these factors contribute to the beauty and harmony of the landscape and biodiversity. Carignan, Syrah, Grenache and Mourvèdre have been able to find their optimal qualitative conditions thanks to the diversity of the terroir. The pudding stones restore heat at night which had been captured by day, and the wind that often caress our vines is a precious ally to preserve them from diseases.

  Our cellar is a vast building in the heart of the village with is wooden mezzanine, with character, overlooking our winery. We improve it every year and we have an investment plan for the material we select with the help of our oenologist by prioritizing. For ageing we have a large operational barrel cellar respecting the environment. This authentic and practical cellar is open to the public and our visitors appreciate to taste the wines in the heart of the cellar where they are elaborated.

Our passion has pushed us to harvest and develop complementary products, the expression of terroir, a know-how. The various products are currently in productions and are not yet available for sale. To be continued!

Olive Oil
We are curious about everything, therefore it was obvious to us that we plant olive trees, a Mediterranean tree by excellence. These majestic trees participate in the beauty of our landscape and our microclimate and terroir are perfectly adapted for its culture. We are eager to harvest our first olives and produce our first oils. Good things come to those who wait.

Vinegars
For some years now, Jérôme has been thinking about it and he wants to start a line of vinegars signed Bertrand-Bergé. Only time will tell but we are sure that this great vinegar will be a new curiosity for the domain.

Truffles
Black diamonds, truffles…patience they are still young.

The first "Appellation d'Origine Contrôlée" wine of Languedoc-Roussillon, is only produced in nine small communal areas: FITOU, Caves, Treilles, Leucate and La Palme, which are all beside the sea, between Narbonne and Perpignan, and Cascastel, Paziols, Tuchan, and Villeneuve in the Corbières-Massif. Documents going back as far as Philip Augustus, Louis XIII and Louis XIV bear witness to the long-standing reputation of Fitou wines.Rabelais particularly appreciated "vin de Palme" which now has the "Appellation d'Origine Contrôlée Fitou" label. he vineyards in Fitou are set out on shaly and argilocalcareous soils with exceptional exposure to the sun. The countryside, whose relief consists in parts of hills and slopes and in others of plateaux, has the advantage of a particularly dry climate and is often swept by a high wind, the "Cers"...

You will cross the ruisseau de la Coume by wading, to go up the path that follows the gorges; there you will see the old mill "d’en Julo". Some sheepfolds or "cortals" in ruins, a magnificent centuries-old oak-green and finally, "Rocs Negres" and great views of the Pyrenees. Further, overlooking the Cathar castle Aguilar, the signal tower "Del Far" and on the falaises de la Caune de l’Arago, where the "Tautavel Man" was found. Take the Grand Rue, at the end take right rue de la Tonnellerie, then left the rue du Pont Romain. You walk along the cemetery (where stands the chapel of Our Lady of Health) to direct you to a road which leaves the village. You go up the river of Coume on its left bank, before crossing a ford take the right path following the gorges where you will see the old mill on the river (Moli to Julo). The Omer Mill overlooks the village of Cucugnan. It was restored in 2003 and began production in 2006. The flour it produces is used to make bread, biscuits and brioches on site. An oven adjoining the mill was built for the purpose. It is wood-fired, made of clay, and weighs more than 30 tonnes. A reception room for groups of adults and schoolchildren has been set up so that educational workshops can be organised. Using fresh, local ingredients whenever possible, we serve up simple cooking with an Occitan influence. Also, there is always a daily prix-fixe lunch where you can have a full meal and a glass of wine or sirop for 10€. For those with a sweet tooth, try a local desert such as goat cheese and honey (all made within 5km of Le Donjon!), a sweet crepe, or a refreshing ice cream...

The Cathar castle Queribus in the south of France (located in the heart of the Corbieres) still stands today as an impressive memorial to the Albigensian crusade of the thirteenth-century. It was only in 1255 that this mountain top fortress fell to French Catholic knights. Queribus held out an additional eleven years beyond the more widely known Cathar castle at Montsegur, which gave Queribus the distinction of being the last of the Cathar castles. As a result, in many ways the capture of Queribus represents the end of the organized Cathar movement and is sometimes referred to as "the last bastion." Geographically, the castle is high and isolated.The exhausting hike up the mountain, a few hundred steep meters, that is necessary to reach the castle is rewarded by the stunniing military architecture of Queribus. The gothic style hall and its polygonal keep are especially worth seeing...
