15 different varietals but just one terroir : white limestone gravel under blue Mediterranean skies. The Sun for ripeness and character, the soil for fresh healthy taste.

Our grapes: Carignan, Carignan, Carignan, Syrah, Terret Gris, Muscat Petits Grains, Grenaches of all colors, Cabernet Sauvignon, Cinsault, Counoise, Maccabeu, Roussane, Viognier and Terret Noir and we’ve even identified some old Aramon...


When we look at this rough and rocky “garrigue” countryside, we can easily understand why the wines taste as they do.

We work the soil with light tools, having long ago abandoned herbicides in favor of mechanical and hand weeding.

Organic certification was an obvious step. Vineyard work is conceived to bring the soil, vines, and all that lives in them closer harmony—low yields and lots of handwork in the spring and summer to allow us to pick the grapes when they are really ripe and precisely delicious.

  Specialties

Once you’ve got wonderful grapes, you concentrate on bringing out their true character in the wines – you find your style (or it finds you). Our winery is very small, low tech—our crusher is several pairs of rubber boots. We try to keep it simple.

At Clos du Gravillas, we’re after a balance between rich and refreshing – a bit of chalkiness and a deep pure dark fruit in the reds, and in the whites an expression more mineral and floral than fruity.

Their vineyards, 8.5 hectares on the 270 meter altitude, Causses of St Jean and Cazelles, benefits from ample summer sunny days and a cooling breeze blowing down off of the Montagne Noire at night.

The Minervois is one of the most ancient vineyards of the Mediterranean region. Indeed, its land was chosen by the Romans as providing ideal conditions for the first vines they planted in Languedoc Roussillon. Its name comes from the ancient city of Minerve, a stronghold built by the Romans and dedicated to the goddess Minerva. Since that time, many amphora shards and vestiges of cellars have been discovered, testimony to the importance of this vineyard. The region, austere in winter and redolent with sunshine in summer, has survived over the centuries its invasions by barbarians, Arabs and Christians. The essence of Minervois la Livinière, as in so many Midi appellations, is the blend; a marriage of different grape varieties that adds subtle nuance of flavour to the whole. Natural alcohol level must reach a minimum of 12% without enrichment (so no chaptalisation) and maximum yield is a modest 45 hl/ha. Ageing may be in barrel or vat, and unlike basic Minervois, the wine must be bottled at source, so cannot be sent off to a négociant elsewhere in France...

The cornerstone of organic farming is the soil. Maintaining a healthy, biologically active soil is the main objective for an organic farmer. In the vineyard it means cultivating the soil and planting cover crops, instead of applying herbicides. It means using natural fertilizers, such as composted animal manure, versus chemical fertilizers. Organic growers use no synthetic growth-regulators (such as Alar). As for not using pesticides, the organic alternative is to encourage natural predators of insect pests instead of using poisonous insecticides. Organic farmers promote "biodiversity" and allow plants other than vines to grow in and around the vineyard. Biodiversity helps regulate the vineyard soil by attracting beneficial insects, spiders and predatory mites, as well as provide shelter and food (pollen, nectar and other bugs), and replaces the need for chemical pesticides or insecticides. What cannot be fully controlled through biodiversity can still be managed organically, through the use of naturally occurring plant or mineral extracts, which leave no residues in the soil. In wet climates the main difficulty is raised by the use of copper sulfate against mildew, which leaves over time levels of copper in the soil that need to be monitored....

Located in the village of Cesseras in the Minervois Herault, Le Petit Causse has become the must-concert bar in the region. Founded in January 2014 by Bruno, the place was taken over in June 2015 by Simon and Colin. Friendly and smiling, Col welcomes you for a simple refreshment or for dining with kitchen Ducky. At the bar, even on the patio it is pleasant on sunny days in the shade of the trees and the sound of crickets, enjoying the famous fish and chips, pizza, le croque du Causse or homemade burgers. Musically, Le Petit Causse organizes concerts every Saturday from April to October, most every Thursday in July and August and a few other summer off-season nights ... Under the leadership of Fan, the program always offers quality and different music styles to be able to meet so many of you. Jeanne continues to run the site (following the sad death of Gilles) and offers a warm welcome, and promoting an enjoyable family atmosphere....

During the months of July and August, Le Maquis is a holiday unique and joyful, often very lively at night, where there is a very friendly atmosphere. You can come alone (e), with friends or family, and be almost certain to leave pockets full address and cool memories. The camping area is spread over two hectares, dotted with trees and shrubs, all sites are shaded. It was concluded to be safe from the curiosity of the herd. Adjoining the site, the area houses the restaurant Feast farmer, wooden tables, a tent, a small stage, a bibliography barter a tree to listen to a selection of sound Maquis emissions. There is also a fleet of bicycles, playground sports (volleyball, badminton, table tennis, etc.), a toy library, petanque, places of business (tent, Berber tent room, restaurant).
