Chateau Maris is situated in the high altitude vineyards of the finest wine producing area of Minervois, La Livinière. Owned by Robert Eden, son of the British Priminister, Chateau Maris is one of the rising stars of the new appellation of La La Livinière.

Since 1997 the vineyards at Chateau Maris have been progressively converted to the biodynamic method. Eden follows the annual biodynamic sowing calendar, where harvesting and planting are dictated by the rhythms of the sun, moon, planets and stars.

It’s not uncommon for people who are new to organic and biodynamic wines to query the extent to which a wine estate can be ‘completely’ organic. Surely, they ask, the organic commitment begins and ends in the vineyard? Well no – and especially not at Château Maris.

“The Biodynamic Apostles of the Languedoc”

 The Domaine was keen to build a winery (chais) that embraced all that was good about new technology whilst not neglecting proven, traditional winemaking practices. The chais has been built with hemp lime bricks that are supported by a wooden structure. The materials are, for the most part, vegetal and a renewable resource. They emit no gases that are bad for your health health, no dust allergens and no static electricity. Equally, they regulate moisture effectively. No ventilation is required and nor is any sort of heating or cooling system. As a plant, hemp consumes CO2 and it requires no pesticides or irrigation. It is also well known for its positive properties in maintaining topsoil. The simplicity of the building method also helped to avoid a lot of site waste. The Château Maris winery will stock CO2 in its hemp walls and in its planted roof. The roof of the office and tasting building will support 380m2 of photovoltaic solar panels capable of producing 49kwc/an. Along with the building’s efficiency, the complex will produce as much energy as it consumes, as well as stocking CO2 to counter any emissions in the winemaking process.

Minervois

The Minervois is one of the most ancient vineyards of the Mediterranean region. Indeed, its land was chosen by the Romans as providing ideal conditions for the first vines they planted in Languedoc Roussillon. Its name comes from the ancient city of Minerve, a stronghold built by the Romans and dedicated to the goddess Minerva. Since that time, many amphora shards and vestiges of cellars have been discovered, testimony to the importance of this vineyard. The region, austere in winter and redolent with sunshine in summer, has survived over the centuries its invasions by barbarians, Arabs and Christians. The essence of Minervois la Livinière, as in so many Midi appellations, is the blend; a marriage of different grape varieties that adds subtle nuance of flavour to the whole. Natural alcohol level must reach a minimum of 12% without enrichment (so no chaptalisation) and maximum yield is a modest 45 hl/ha. Ageing may be in barrel or vat, and unlike basic Minervois, the wine must be bottled at source, so cannot be sent off to a négociant elsewhere in France...

There are thousands of grape varieties contributing to a vast array of different wine styles with each variety having its own distinct flavours and characteristics. Varieties can be made uniquely to make a wine, in whch case the wine is known as a varietal, or collectively with other varities, when the wine is known as a blend. The soils and ‘terroirs’ in the Aude area are very varied, from Schist, Sandstone, Marl, Gravel, Pebbles, Limestone, to Granit and Alluvial soil; thus making many marvelous and different styles of wine. Also in this massive area are many different grape varieties, the reds include Carignon, Cinsault, Granache Noir, Syrah, Mourvèdre, Cabernet Franc, and Merlot. The whites, Chardonnay, Granache blanc, Picpoul, Marsanne, Roussanne, Vermantino, Mauzac, Chenin and Clairette...

Summer eating is in the small plaza adjacent. It is situated in the close-by village of La Livinière (a focal point of some of the best minervois wine production — it is claimed)....

Apart from the abbey, the attraction of Caunes lies in its rich historical and architectural heritage. The façades of the buildings are adorned with numerous architectural features dating from the 15th and 18th centuries. Remains of the fortified walls which surrounded Caunes can be seen on a walk through the village. Other more recent monuments which reveal a way of life and traditions now dying out are also worthy of mention, such as the old wash houses, the irrigation channel and the cobbled lanes....


Notre Dame

Situated 2km from Caunes, Notre Dame du Cros is a remarkable site with a chapel dedicated to the worship of the Virgin Mary. Following a miraculous cure by the spring water, three small dry stone chapels were built on a steep slope with three statues, the Virgin Mary, Saint Joseph and Saint John. This is the origin of the pilgrimage of the Cros. A larger chapel had to be built as the number of devotees grew. Pilgrimages and processions were regularly organised to coincide with the feasts of the Assumption and the Nativity and the relics of the Caunes martyrs were associated with processions asking for rain, for the protection of the harvest etc. Religious rituals were also observed during Easter week. A few pilgrimages and celebrations have survived to the present day, specifically on 15 August and 8 September. Inside the church, the chancel is lavishly decorated with paintings framed with marble and gilded wood and the beautiful communion table, pulpit and font are all made of marble...
