Château du Donjon - Bagnoles

The Château du Donjon is in the Languedoc region of southern France, some 10km from the medieval city of Carcassonne.

The Château du Donjon was formerly an outpost for the monks of the abbey at Caunes-Minervois. It takes its name from the ancient castle at Bagnoles with its picturesque 13th century walls towering over the cellars.

In the winter it looks over the snowy peaks of the Pyrenees. The vineyard is situated on the terroir of La Clamoux, an area where the climate of the Mediterranean meets the influence of the Atlantic Ocean. The land is made up of clay and limestone slopes and stony terraces and it is designated AOC Minervois. This appellation is named after the ancient city of Minerve, originally a Roman fortress named after the Goddess Minerva.

Minervois is one of the oldest of the Mediterranean wine-producing regions and has been in existence since the Romans chose the area for their first Languedoc vineyard more than 2000 years ago. Cabardes is the youngest appellation of the Languedoc. Cooler than the surrounding area, it is well suited to both Atlantic and Mediterranean varietals, and offers truly original wines of exceptional balance and complexity.

  Specialties

"The work can be hard and sometimes thankless but it is noble, varied and always fascinating. It involves a close relationship with nature, constantly seeking to overcome the infinite challenges of the climate and terroir".

The process of turning grapes into wine follows traditional methods. Although new technology is used respect for traditional methods is always maintained. Each grape variety is vinified in a different way and grapes from different plots of land have their own fermentation vats which are monitored daily. Temperature control is fully automated and is essential for maximum extraction of flavour from the fruit. Although the average time for fermentation is 10 days, some varieties spend more than one month in contact with the skins. At the end of the fermentation process the wine is drained from the vat and press wine is produced from the pressing of the grape solids. The wines are rigorously tasted and subsequently blended in January after the harvest and the selection of wines for ageing in oak barrels is made at this time. Bottling, using the latest technology, takes place throughout the year...

Minervois

A.O.C. Minervois

The Minervois is one of the most ancient vineyards of the Mediterranean region. Indeed, its land was chosen by the Romans as providing ideal conditions for the first vines they planted in Languedoc Roussillon. Its name comes from the ancient city of Minerve, a stronghold built by the Romans and dedicated to the goddess Minerva. Since that time, many amphora shards and vestiges of cellars have been discovered, testimony to the importance of this vineyard. The region, austere in winter and redolent with sunshine in summer, has survived over the centuries its invasions by barbarians, Arabs and Christians. The essence of Minervois la Livinière, as in so many Midi appellations, is the blend; a marriage of different grape varieties that adds subtle nuance of flavour to the whole. Natural alcohol level must reach a minimum of 12% without enrichment (so no chaptalisation) and maximum yield is a modest 45 hl/ha. Ageing may be in barrel or vat, and unlike basic Minervois, the wine must be bottled at source, so cannot be sent off to a négociant elsewhere in France...

Cabardès

A.O.C. Cabardès

The Cabardès region is situated to the west of Languedoc and to the south of the central massif, a geologist's dream, balanced between east and west, the sun and the coolness, the heathland and the mountain. It is here that the winds cross. They bring the intense mediterranean heat necessary for southern "cépages" (grape types) such as syrah and grenache, and the cool atlantic humidity for the ocean "cépages": merlot, cabernet-sauvignon, cabernet-franc, cot and fer-servadou, to prosper. The vineyards and wines of Cabardès have been recognized as AOC since february 1999. The quality of the grapes, the wine-making, the blending of the "cépages" and the keeping of the wines has allowed us to obtain the best balance between fruit and structure, fullness and complexity, intensity and elegance. Cabardès assembles 30 châteaux and domaines over 500 productive hectares spread amongst 18 villages. 20000 hectolitres are produced each year,of which 60% are exported....

Auberge de Clamoux, a small inn that serves a fine three-course weekday menu at 13€. Go ahead and try the salad with gesiers (duck gizzards, a regional favorite) or sample the offering of charcouterie (hams, sausages, etc). The main course is generally meat, duck or salmon, and the desserts are impressive. One lunch time here, the main dining room had been converted to a huge table seating several dozen French men and women in their 70s and 80s, plowing through huge platters of food and liters and liters of wine. Every meal in France is a celebration. Count on at least an hour and a half....
