Within the vast wineyard of the Languedoc, the Château d'Antugnac now operates 95 hectares on the Limoux appellation area in the Haute-Vallée de l'Aude. This specific region is located at the extreme south-west of the Languedoc vineyards, at the foot of the Pyrenees in a zone where climatic influences, Mediterranean and Atlantic, blend together.

This is a magical place and it seduced on the spot the Collovray & Terrier, enamored of the grand landscapes and the Cathar relief. In the middle of other rather exotic grape varieties for people born in the Mâconnais, we find in the Aude Valley the famous Chardonnay and Pinot Noir, icons of Burgundy: that is a considerable argument to conquer these new terroirs and learn from their specificities.

It doesn't boil down to the blanquette in Limoux!

For a long time in the shadow of the sparkling wines -the famous Blanquette de Limoux whose date of birth goes back to 1531-the still wines from the Limoux region have managed to opt for originality based on the coexistence between the Atlantic and Mediterranean grape varieties and on the local microclimate. Here, the vines are planted on terroirs whose altitude varies between 200 to 600 meters, which allows to temper the summer heats. This zone of climatic confluence enjoys an optimum sunshine due to the Mediterranean influence, cool nights because of the proximity of the Pyrenees, a good ventilation generated by the Tramontane and a balanced rainfall due to the ocean influences.

  The white Limoux AOC was created in 1959 and substantially modified in 1993, especially as far as plantings are concerned. The white Limous can be made with Chardonnay, Mauzac (local grape variety also called blanquette) or Chenin (grape variety usually to be found in the Loire Valley). The proportion of Mauzac has to be of 15% minimum. The white Limoux are large and plump wines with complex aromas recalling pineapple, toasted almonds, hazelnut, vanilla and licorice. The red Limoux AOC is far more recent as it goes back to 2004. The grape varieties are constituted of at least 50% of Merlot, 30% of Côt (or Malbec), Syrah, Grenache and a maximum of 10% of Carignan. The remaining grape varieties, the Cabernet Franc and the Cabernet Sauvignon, share the remains of the blending. With a plum and licorice background as well as a good tannic structure, the Atlantic grape varieties bring dried fruits and spice hints, while the Mediterranean ones introduce ripe fruit and garrigue accents.

For both names, quite limited in terms of amount of cultivated space, the Name Decrees impose strict rules in terms of culture, wine production methods and maturation in order to tend towards the best quality. In addition to the AOC from Limoux, still wines produced locally are ranked among the Pays d'Oc wines or wines from the pays de la Haute-Vallée de l'Aude.

A rapdily growing domain.
At the time of its purchase by the Collovray & Terrier families, the Antugnac Domain operated 45 hectares. It now has around 95 hectares planted in red and white, in almost equal proportions. Most vineyards were replanted by the Collovrays & the Terriers with vines produced in the Mâconnais.

Limoux is best known for its sparkling wine, Blanquette de Limoux. This is reputed to be the oldest sparkling wine in France and dates back to 1531 when Benedictine monks from Saint Hilaire Abbey discovered that the wine they had laid down had fermented and formed bubbles. This was the beginning of Limoux’s bubbly - the Blanquette de Limoux which was the first AOC to be created in the Languedoc area. The process (the locals say) was stolen by Dom Perignon who went on to create ‘champagne‘. however the Limoux sparkling wine is a very high quality champagne substitute and Crémant, which was developed in 1990, has a top class reputation. Now a prestigious event attracting buyers from all over the world, “Toques & Clochers” puts up for auction the most promising barrels of AOC Limoux. A share of the proceeds are then used to finance the renovation of bell towers in surrounding villages. Every year the auction is hosted by one of France’s great chefs popularly referred to as a “Toques”, the traditional white chef’s hat....

History tells us that Blanquette de Limoux, the world's first sparkling wine, dates as far back as 1531. At the time, the monks of the Benedictine abbey of Saint-Hilaire, near Limoux, were producing a somewhat unusual white wine in their cellars. Inside its glass flask, with a cork top - very rare for wines at this time - it acquired a natural sparkle. This was the forefather of the brut which is tasted today at the world's most prestigious tables. Since they first started cultivating vines, the growers of Limoux have aimed at maintaining the originality of the Blanquette de Limoux growth and developing its quality. The region's surrounding hills protect it from the extremes of the Mediterranean and Atlantic climates, with the area enjoying a microclimate particularly suitable for making quality white wine. The vines classified in the appellation are always planted at the top of southern-facing slopes, giving the best exposure. The soil here is shallow and sparse, full of chalk and stone....
