The Alaric Mountain is a region where all the geological eras are represented. It's an enormous mass of limestone, a vast reservoir for groundwaters which emerge at Fontcouverte at a temperature from 18 to 22°C. The La Baronne vineyard is planted between 100 and 200 meters altitude on tertiary and quaternary limestone, clay or sandstone formations which are of marine, river or lacustral origin hence the large variety of "terroirs".


Our 90 ha vineyard is surrounded by forests of holm oak, cypress and pine trees, and also by limestone "garrigue" or scrubland with a rich flora (shrub oak, rosemary, boxwood, juniper, broom, thyme, rockrose, or strawberry trees... plus two botanical curiosities: allium molly and genista villarsii.).

At La Baronne, the traditional grape varieties of the Languedoc have always been the order of the day... the old Carignans (up to 115 years old!), Grenache Noir, Syrah and Mourvedre for the reds (90% of the vineyards), or Grenache blanc, Roussane, Vermentino and Bourboulenc for the whites. But the Lignères Family has a special affection for Carignan, constantly striving to heighten the expression, finesse and elegance of this emblematic variety of the region.

  Specialties

The harvest is collected in boxes, by hand on the whole entire estate. Each parcel is vinificated separately until the eventual final blend. The grapes are first selected and separated in the vineyard, then before and after destemming. The berries are pushed by gravity in the cement, stainless steel and wooden truncated cone vats made by Marc Grenier in Courberon. For the whole-grape vinifications, we tread the grapes in the wooden vats. Whites are rosés are vinified traditionally with pressed juice. Alcoholic fermentation is done with indigenous yeasts. There is no addition of sulfur until the beginning of aging. Some of our wines are made with no added sulphites (except those produced by the action of the yeasts).

For all our wines, red, white or rosé, the ageing is done on the full lees. 40% of the red wines are made in cement vats and 60% in barrels. The wine ageing is done with the “bung on the side” with batonnage of the lees by rotation of the barrels without topping up. Its duration varies from 9 to 14 months according to the batch of wine. The wines then rest in the vat until the bottling.

Fining and filtration aren't systematic. Wines are bottled during the waning moon and on "Flower" days.

The Corbières is one of the wildest areas of France with one of the lowest population densities. It is picturesque with wine growing areas alternating with garigue and mountainous countryside. It is located mainly in the Aude département and partly in the Pyrénées-Orientales département. The River Aude borders the Corbières to the west and north. To the south is the River Agly and to the east the the Mediterranean Sea. The name Corbières comes from "cor" a pre-Celtic word meaning "rock" and "berre" from the River Berre which runs through Durban. The eastern part of the Corbières with its Etangs, borders the the Mediterranean Sea and is called the Corbières maritimes. It has its own distinctive climate and characteristic vegetation known as thermomediterranean vegetation...

The cornerstone of organic farming is the soil. Maintaining a healthy, biologically active soil is the main objective for an organic farmer. In the vineyard it means cultivating the soil and planting cover crops, instead of applying herbicides. It means using natural fertilizers, such as composted animal manure, versus chemical fertilizers. Organic growers use no synthetic growth-regulators (such as Alar). As for not using pesticides, the organic alternative is to encourage natural predators of insect pests instead of using poisonous insecticides. Organic farmers promote "biodiversity" and allow plants other than vines to grow in and around the vineyard. Biodiversity helps regulate the vineyard soil by attracting beneficial insects, spiders and predatory mites, as well as provide shelter and food (pollen, nectar and other bugs), and replaces the need for chemical pesticides or insecticides. What cannot be fully controlled through biodiversity can still be managed organically, through the use of naturally occurring plant or mineral extracts, which leave no residues in the soil. In wet climates the main difficulty is raised by the use of copper sulfate against mildew, which leaves over time levels of copper in the soil that need to be monitored....
