In the old stables with visible beams, or even on the terrace in Southern colors, you can take your time to savor the regional cuisine of our restaurant. You can taste the delicious dishes of our chef and our regional specialities: For starters, as an aperitif, in the shade of the lime-trees, a good glass of blanquette de Limoux (the first bubble in the world!). Then a good home made cassoulet with one of our AOC wine Malepère (Advised by the brotherhood of Cassoulet of Castelnaudary). A true moment of taste and tranquility!

If you want to eat an ice cream or have a drink, welcome to the bar. In the former wine cellar of the domaine, completely renovated with stonework, come to discover our wine bar! You will taste one of our many wines of our region, enjoy some tapas, pizzas or other dishes (on the spot or takeaway) and enjoy cozy evenings (concerts, dances…)

A Greco-Roman amphitheatre style aquatic centre with 4 basins:

The Malepère region was awarded AOC status on May 2nd 2007. It is a hilly area south-west of the city of Carcassonne which is included in the appellation along with 31 other towns and villages. Although the area claims a great history of wine making it was in the 1970’s that the vineyards began to be replanted and VDQS status was granted. VDQS is the intermediary wine designation between Vin de Pays and AOC and is a testing ground for would-be AOC’s to prove that wines from all the producers share a common personality before they can be awarded full AOC status. Although an obscure region the Malepère is well worth a visit and offers a very different terrain to the more recognizable Languedoc appellations. There are many interesting medieval circular villages to visit. They were built this way to form ramparts to act as protection for the inhabitants. The Cathar religion was strong here and the area is immersed in history and folklore...


Limoux

A.O.C. Limoux

Limoux is best known for its sparkling wine, Blanquette de Limoux. This is reputed to be the oldest sparkling wine in France and dates back to 1531 when Benedictine monks from Saint Hilaire Abbey discovered that the wine they had laid down had fermented and formed bubbles. This was the beginning of Limoux’s bubbly - the Blanquette de Limoux which was the first AOC to be created in the Languedoc area. The process (the locals say) was stolen by Dom Perignon who went on to create ‘champagne‘. however the Limoux sparkling wine is a very high quality champagne substitute and Crémant, which was developed in 1990, has a top class reputation. Now a prestigious event attracting buyers from all over the world, “Toques & Clochers” puts up for auction the most promising barrels of AOC Limoux. A share of the proceeds are then used to finance the renovation of bell towers in surrounding villages. Every year the auction is hosted by one of France’s great chefs popularly referred to as a “Toques”, the traditional white chef’s hat....

The Restaurant "The Tourtines" was originally a private hunting area, since it is open to the public a few months. Located on one of the highlights of Malepère, the restaurant on the ground floor and two apartments (stone towers with panoramic terraces) enjoy breathtaking views of the Pyrenees and the Corbières south side to the east. The place is ideal for meetings and family celebrations. About fifty guests can be served in the large dining room the atmosphere of a great Canadian cottage. The gites are equipped with; kitchen, large lounge, panoramic terrace, 3 double bedrooms with shower, sink and toilet, air conditioning ... up each lodgings that are rented by the week or the night, with or without breakfast....

The Benedictine abbey of Saint-Hilaire stands in the picturesque valley of the Lauquet. It occupies a dominant position in the heart of the former medieval fortress of Saint-Hilaire. The monastery is on a human scale surrounding its Gothic cloister. It houses the sarcophagus of Saint Saturninus, a major work by the Master of Cabestany. This was where the monks invented, in 1531, the world's first sparkling wine - Blanquette....

Parents are free to visit the area, or take part in riding activities too!
