  Specialities

Lauragais, land of plenty marked the Cathar history, offers a variety of landscapes (agricultural plain, Piedmont of the Black Mountain, Cuesta,...), a heritage second to none (the Canal du Midi) and spaces where relaxation and reverie are allowed (bank of the channel ..)

Over the seasons, nature offers wealth found at our table for the sake of our taste buds.

It is in a setting where wood and friendly mix we offer our kitchen to discover the colors and scents of our region, as for starters, salad mushrooms (in season), or miles of vegetables and coriander leaves cool.

Cabardès

The Cabardès region is situated to the west of Languedoc and to the south of the central massif, a geologist's dream, balanced between east and west, the sun and the coolness, the heathland and the mountain. It is here that the winds cross. They bring the intense mediterranean heat necessary for southern "cépages" (grape types) such as syrah and grenache, and the cool atlantic humidity for the ocean "cépages": merlot, cabernet-sauvignon, cabernet-franc, cot and fer-servadou, to prosper. The vineyards and wines of Cabardès have been recognized as AOC since february 1999. The quality of the grapes, the wine-making, the blending of the "cépages" and the keeping of the wines has allowed us to obtain the best balance between fruit and structure, fullness and complexity, intensity and elegance. Cabardès assembles 30 châteaux and domaines over 500 productive hectares spread amongst 18 villages. 20000 hectolitres are produced each year,of which 60% are exported....

Created in the late '70s by damming the river Ganguise, this is a beautiful 280 hectare lake, which has become a centre for swimming, sailing, windsurfing, walking and wildlife. The attraction of 6 km of water, caused the Castlenaudary sailing club to move to the lake in the mid-80s. From their club on the western end of the lake, they now offer catamaran, sailing dinghy (Laser, 420 & 470), windsurfer, pedaloe and canoe hire. During July and August they also offer 5 day sailing and windsurfer courses. All around the lake there are beaches suitable for sun-bathing and swimming as well as a restaurant and a couple of bars....

Bram is a commune in the Aude department in the Languedoc-Roussillon region in southern France. Bram is part of the old province of Lauragais, and is 790 km from Paris. The CD33 road to the village follows the Roman road, the Romans settling in the area because of a climate which balanced the warmth of the Mediterranean with the freshness of the Atlantic. In 60BCE, they began construction of Bram and called it Eburomagus. Roman remains suggest the town was less round than the current town. Eburomagus disappeared. The modern town was born in the 12th century, built around its fortress church. By the 17th century Bram had outgrown its walls and expanded in concentric circles...
