At the honey farm, you can explore the world of bees and honey and the nature and heritage of the Corbières area.

The bee-keepers themselves will explain all the stages of manufacture and get you to join in.

To end the visit, there is a tasting of the honey farm's products which can be bought on site (honey, gingerbread, mead, pollen, honey caramels, candles...).

Close to the Abbey of Fontfroide, in the heart of the Corbieres vinyard, the bee-keepers of the -miellerie des Clauses- will welcome and allow you to disover their daily gestures and their passion for the trade and their honey.

You will be able to taste a large range of honey.

Here, the ginger-breads are exclusively prepared with honey.

You will find several varieties, each one more mellow than the other...

- Honey house opening hours with free guided tours: 7/7, 9.00-12.00 am and 2.00-6.00 pm
- June to September and school holidays: free guided tours and tasting sessions
- Weekday starts: 10.30 am, 2.30pm and 4.00 pm
- Weekend starts: 10.30 am, 3.00pm and 4.30 pm

- The Path of the Bees
- From April 7th till May 5th every Tuesday and Thursdays at 14:30 pm
- Lasted approximately 1 hour
- July and August, Monday to Friday at 5.30 pm
- No charge for accompanied children under 12

The Corbières is one of the wildest areas of France with one of the lowest population densities. It is picturesque with wine growing areas alternating with garigue and mountainous countryside. It is located mainly in the Aude département and partly in the Pyrénées-Orientales département. The River Aude borders the Corbières to the west and north. To the south is the River Agly and to the east the the Mediterranean Sea. The name Corbières comes from "cor" a pre-Celtic word meaning "rock" and "berre" from the River Berre which runs through Durban. The eastern part of the Corbières with its Etangs, borders the the Mediterranean Sea and is called the Corbières maritimes. It has its own distinctive climate and characteristic vegetation known as thermomediterranean vegetation...

Organic Wine

The cornerstone of organic farming is the soil. Maintaining a healthy, biologically active soil is the main objective for an organic farmer. In the vineyard it means cultivating the soil and planting cover crops, instead of applying herbicides. It means using natural fertilizers, such as composted animal manure, versus chemical fertilizers. Organic growers use no synthetic growth-regulators (such as Alar). As for not using pesticides, the organic alternative is to encourage natural predators of insect pests instead of using poisonous insecticides. Organic farmers promote "biodiversity" and allow plants other than vines to grow in and around the vineyard. Biodiversity helps regulate the vineyard soil by attracting beneficial insects, spiders and predatory mites, as well as provide shelter and food (pollen, nectar and other bugs), and replaces the need for chemical pesticides or insecticides. What cannot be fully controlled through biodiversity can still be managed organically, through the use of naturally occurring plant or mineral extracts, which leave no residues in the soil. In wet climates the main difficulty is raised by the use of copper sulfate against mildew, which leaves over time levels of copper in the soil that need to be monitored....

If you love excellent food and wine, then there can be no finer restaurant in the South of France as Auberge du Vieux Puits. This 3 star Michelin restaurant is run by the celebrated French chef, Gilles Goujon. I can not recommend this restaurant highly enough. The food, the service, the wine, the cheese . . . all were excellent. Nobody has given Gilles Goujon anything for free. On the contrary. In a bucolic atmosphere far from the mundane noise, in an austere building –sold by the tiny Town Hall– he has been progressively restoring for a decade, he has been able to captivate plenty of customers and reach the top of the French guides: 5 hats in Gault Millau and 3 stars in Michelin. We can say we are before a self-made man who had to fight and sweat blood to reach fame; a fame very few chefs deserve so clearly....

The owners of Les Terrasses de la Berre gives you a warm welcome. This charming restaurant is a small cosy place with a fireplace, badly needed, because it was lashing rain outside. They have a lovely menu. Salads for starters, a selection of lovely local cheeses and its majesty, the local specialty Cassoulet, what a culinary experience. Nice place, in a nice village, run by lovely people and fantastic food.... you happen to pass by, this is a must try place... The restaurant has multiple small terraces overlooking the Berre. Note that the unusable terraces are the days of high winds. Summer must be reserved for certain of being placed...
