Our cabins have attractive rooms and our aisles swing through the undergrowth ... They are waiting for you in this beautiful region of Carcassonne. In a solitary, loving or family atmosphere, you will appreciate the enchanting surroundings of the 112 hectares of agricultural land, bordered by the Canal du Midi and with a direct view of the medieval city ... The houses in the woods are open all year as hotel. With their classification of *** our cabins are a perfect starting point to discover the region and where you can isolate yourself in the Mediterranean nature.

There are still some remains of a lookout tower from the twelfth century, but crossed by the Roman road (via Aquitania which connects Narbonne with Bordeaux) there are indications for the existence of the area from the 2nd century BC. In the 14th century, Prince Black from England would have organized his last base here during the plundering of the suburbs of Carcassonne and his first attacks on the medieval city... before giving up, under pressure by his defense... Dissatisfied with, he wanted to defeat his nerves, by throwing la ville basse (the low city) flat!

The païchère (water reservoir) on the river, the forced water pipe and the workshops, now in ruins, testify to the very strong weaving activity on the banks of the Orbiel at the end of the 17th century. At that time, the bishopric -owner of the Estate- offered Paul Riquet the strip of land he lacked, to allow the creation of his Canal du Midi! In thanks, Paul Riquet has given the name of l’Écluse de l’Evêque, to the work that borders the property. Since the late eighteenth, Fourtou was more a resort than a real castle. It was at the beginning of the following century that the Barbes family settled down and the young Armand spent his youth there before experiencing the exaltation of political and social struggles... A fierce and eternal republican opposed to the monarchy, he died in exile in The Hague before his ashes are repatriated on the grounds of his childhood in the monument which is installed at the highest point of the Domain. The end of the 19th century saw the transformation of the estate into a fully viticultural activity. The buildings exist in their present form since that time.
  It is a magical place in the region of Carcassonne, between Toulouse and Montpellier (and halfway Bordeaux and Marseille...). You will appreciate its enchanting environment in a private domain of 112 hectares, with its gently sloping garden to the Canal du Midi and its Mediterranean nature. In the morning, the particular luminosity of the region offers breathtaking views of the medieval city of Carcassonne, the Alaric and the Pyrenees. It is not uncommon, at dusk, to see occasionally a fox, deer or a family of wild boars under the eyes of raptors that crisscross the sky ...

More than just a hotel...
Respect for nature, tourism and ecology... do not necessarily rhyme with spartan and uncomfortable habitat. As our equipment, our cabins are at the level of  3 stars obtained at our opening in 2014.
You will find a comfortable and attentive welcome in all seasons. Our cabins are extraordinary: their architecture is both contemporary and perfectly integrated, their situations on stilts attached to the slope or perched in old trees, and finally their access facilitated by bridges or a few steps that do not require any climbing.

If you want to make the most of your cabin, dinner (in basket) will be served from 7:30 pm. The next morning, the breakfast you have chosen will be brought to you in a basket ... You will only have hoist on the terrace.

The Corbières is one of the wildest areas of France with one of the lowest population densities. It is picturesque with wine growing areas alternating with garigue and mountainous countryside. It is located mainly in the Aude département and partly in the Pyrénées-Orientales département. The River Aude borders the Corbières to the west and north. To the south is the River Agly and to the east the the Mediterranean Sea. The name Corbières comes from "cor" a pre-Celtic word meaning "rock" and "berre" from the River Berre which runs through Durban. The eastern part of the Corbières with its Etangs, borders the the Mediterranean Sea and is called the Corbières maritimes. It has its own distinctive climate and characteristic vegetation known as thermomediterranean vegetation...


Minervois

A.O.P. Minervois

The Minervois is one of the most ancient vineyards of the Mediterranean region. Indeed, its land was chosen by the Romans as providing ideal conditions for the first vines they planted in Languedoc Roussillon. Its name comes from the ancient city of Minerve, a stronghold built by the Romans and dedicated to the goddess Minerva. Since that time, many amphora shards and vestiges of cellars have been discovered, testimony to the importance of this vineyard. The region, austere in winter and redolent with sunshine in summer, has survived over the centuries its invasions by barbarians, Arabs and Christians. The essence of Minervois la Livinière, as in so many Midi appellations, is the blend; a marriage of different grape varieties that adds subtle nuance of flavour to the whole. Natural alcohol level must reach a minimum of 12% without enrichment (so no chaptalisation) and maximum yield is a modest 45 hl/ha. Ageing may be in barrel or vat, and unlike basic Minervois, the wine must be bottled at source, so cannot be sent off to a négociant elsewhere in France...

The Lac de la Cavayère (Cavayere lake) is a large man-made lake not far from Carcassonne Chateau that was built in 1988. It is surrounded by the beautiful Mediterranean landscape and is spread over 40 hectares. A footpath goes all the way round the lake, which is a leisurely hour and a half's stroll. There are also two beaches (a sandy one and a pebble beach), which are suitable for swimming and have life guards present during the summer, a play area for children with bungee cords attached over trampolines, to give you extra bounce and o2 - an adventure park created by hanging ropes between trees where you can climb, slide and swing, including a long 'slide' over part of the lake itself.
