The first "Appellation d'Origine Contrôlée" wine of Languedoc-Roussillon, is only produced in nine small communal areas: FITOU, Caves, Treilles, Leucate and La Palme, which are all beside the sea, between Narbonne and Perpignan, and Cascastel, Paziols, Tuchan, and Villeneuve in the Corbières-Massif.
Documents going back as far as Philip Augustus, Louis XIII and Louis XIV bear witness to the long-standing reputation of Fitou wines.Rabelais particularly appreciated "vin de Palme" which now has the "Appellation d'Origine Contrôlée Fitou" label. he vineyards in Fitou are set out on shaly and argilocalcareous soils with exceptional exposure to the sun. The countryside, whose relief consists in parts of hills and slopes and in others of plateaux, has the advantage of a particularly dry climate and is often swept by a high wind, the "Cers".

The Carignan grape is at its very best in this countryside: here it ripens to perfection to give strong, full-bodied wines with real substance and a rich, deep colour. The Grenache grape is the ideal complement to the Carignan, bringing its fine, smooth, mellow qualities. A small percentage of Syrah and Mourvèdre also brings its richness in flavour and a delicious aftertaste worthy of the greatest of wines. From the marriage of these varieties of vines is born the harmony which characterises the Fitou wines. Whilst the region of Fitou, the climate and the vines enable wines to be produced, which are remarkable for their body and fullness, the enthusiast has the opportunity to discover the nuances which develop as the wines mature. First we find young, full-bodied Fitou wines with the fragrance of flowers and fruit, rich in noble tanins. Then, beyond two years of age, we encounter wines with a real structure, with a dark, deep colour and a nose with a hint of violet, liquorice, thyme, rosemary and the flowers of the Provençal moorland. These Fitou wines are always elegant and deliciously mellow.
AOC-AOP Fitou

The appellation is an enclave within the Corbières area in the Languedoc wine-growing region in France. It was the first in this region to be classified in 1948, and in the 1980’s developed to be a really trendy appellation. The vineyard area totals around 2.600 hectares, located on the Mediterranean coast, on the border with the Roussillon wine-growing region. The appellation is split along geographic lines, the two zones are located at a distance of ten kilometres from each other: Fitou Maritime with the communes of Caves, Fitou, La Palme, Leucate and Treilles, and Fitou de Hautes-Corbières with the communes of Cascastel, Durban, Tuchan and Villeneuve-les-Corbières. The red wine has a good maturation potential, it is a blend made from Carignan, Grenache Noir and Lladoner Pelut (together a minimum of 90%, of which Carignan may be a maximum of 75%), as well as from Cinsaut, Macabéo, Mourvèdre, Syrah and Terret Noir (together a maximum of 10%). Well-known producers include Domaine Bertrand-Berge, Château de Nouvelles, Domaine Lérys, Domaine Rolland and the CV Val d´Orbieu. The AC wines Rivesaltes and Muscat de Rivesaltes may also be produced in the Fitou region.
  Cinsault Fitou wines may only be brought on to the market after a period of nine months after the harvest. It is then that their quality is inspected by the "National Institute of Appellations Contrôlées" and the "Winegrowers Association". However, in most cases, the wines are only made available for consumption after a period of twelve to eighteen months maturation, for the youngest among them. A signal characteristic of AOC-AOP Fitou is its capacity to mature and improve with age. Thus, extremely good bottles of Fitou are four or five years old and sometimes much older still. Allow the bottles of Fitou to mature in a cool cellar at a relatively constant temperature and you will be pleasantly surprised. The Fitou wine matures and brings to culmination those innate qualities of distinction and elegance which characterise it.

Red Wine  Rosé   The permitted grape varieties for red and rosé wine are:
  Grenache, Carignan, Syrah and Mourvèdre.

White Wine  The most important grape varieties for white are Chardonnay, Maccabeu, Grenache Blanc and Rousanne.

  The little village of Fitou, which lies in the far south of France in the department of the Aude, is a small village whose reputation as a wine producer goes before it. Known to many as a name on a label of a delicious, full bodied and spicy red, Fitou is lesser known as the delightful authentic southern village it is. For such a small village, Fitou held an important position historically, and has been the site of many a battle and occupation. Today it is a peaceful place, dreaming away its days under the hot southern sun, gazing out over the blue Mediterranean Sea from its vantage point on the hillside. The work of the village takes place not in the streets and buildings of Fitou, but in the vineyards. Syrah - A very strong grape variety
  Here the stony soil and rich fertile earth combine with the climate to produce robust red wines, unique in character and loved by many. The vineyards cover the ground between the
village and the sea, and reach behind to the hills of the lower Corbières. This is a land steeped in legend and mystery, a land where the Cathars faced their fates with faith, a land where even the language was unique!

Domaine "Les Enfants Sauvages" is our vineyard in South- France. Whatever you would like to know about our wines, just look at the corresponding side. Our vineyard is 30 km north of Perpignan, 5 km from the Mediterranean as the crow flies, and 150 m above sea level. All our vineyards are grouped in two plots of land in the midst of natural wild "garrigue" vegetation. This protects us from undesirable influences such as sprayed chemicals and diseas. Instead ourvineyards are surrounded by almond, fig and olive trees and the aromatic herbs so typical of the garrigue - thyme and rosmary. All our vines are head trained in the classic gobelet cultivation style. The vineyards of our terroir are on limestone soil. The total area is 12 hectars, of which 8 are cultivated at present. We pick our grapes by hand and collect them in small baskets to avoid damading the grapes. Our harvest goes straight into our own cellar for immediate processing.

A farm from 1389 to 1589, it was transformed into a castle belonging to the Aragon family until the French Revolution in 1789. Was administered by Voltaire’s nephew – the philosopher greatly enjoyed the property’s wines, as mentioned in a letter dated November 12th, 1770. Destroyed, then rebuilt, the castle has since become an authentic “Mas” of the Languedoc region, surrounded by vineyards. It is close to the Mediterranean coastline, and at the foot of the Massif des Corbières, halfway between Narbonne and Perpignan. “Les Fenals” estate benefits from 3 Appellations d’Origine Contrôlée (AOC-AOP – appellation with guaranteed vintage)....

The Greeks brought the vine to the Fitou area, which stretches between Narbonne and Perpignan and as far as the mountains of Corbières. Later, the Romans developed its cultivation. Today, wine growers in nine areas produce the Appellation Fitou: Caves, Fitou, Lapalme, Leucate and Treilles by the sea, Cascastel, Paziols, Tuchan and Villeneuve inland. They produce mainly red wines, full bodied, with complex aromas. Powerful, generous, of a dark ruby red, Fitou develops fully after five or six years. Estate located in Tuchan and spreading over 20 hectares, 17 of which are in the Fitou appellation, and the rest in the Muscat de Rivesaltes appellation and vins de pays...
