Restaurant "Ici et Là" is the result of a meeting of four friends from different geographical origin that fell in love with the Limoux region, with its wineries, its local customs and its delicious cuisine.

"For the taste buds, we united our strengths and talents to enjoy some of our recipes favorites with the intention to serve you dishes from here and elsewhere.

Subject to availability of the products and the dependence of the seasons, we strive to make you enjoy fresh local produce, all homemade.

For your viewing pleasure, we have the walls of the restaurant held available for local artists to exhibit their work.

For your listening pleasure, we offer a number of Friday evening concerts: jazz, blues, bossa nova, French chansons or rock. The repertoire is varied and musicians are always talented."
  Specialities

A French town located in the Aude department (Languedoc-Roussillon region) and just 20km in the south from Carcassonne, Limoux is crossed by the Aude River.

The town is renowned for its sparkling wine (the oldest in the world) called la “Blanquette de Limoux” and for its carnival lasting about 3 months.

With its Mediterranean climate and its “ville fleurie” tag, Limoux is a town where it is pleasant either to live or spend holidays. Limoux’s railway station leads to Carcassonne and Rivesaltes from where you will be able to travel towards many destinations.

Not to mention Limoux’s Carnival; it takes place each year in January and lasts about 3 months. This is the longest carnival in the world. Each week-end, groups of people come and go in the streets of Limoux on a local music and dressed with a traditional costume (usually Pierrot costumes). Limoux Carnival is one of the most famous in the world, after Venice and Rio de Janeiro Carnivals.

A.O.C. Limoux Blanquette de Limoux, Crémant de Limoux, Blanquette Méthode Ancestrale Since 1875, Maison Guinot has been vinifying Blanquette and Crémant de Limoux using the ‘Méthode Traditionnelle’. When the grapes are ready, generally in September, they are picked by hand. Mauzac grapes, Chardonnay and Chenin Blanc are immediately pressed separately. The juice obtained is then naturally fermented in vats and turns into alcoholic white wine (Approximately 11% volume). In January following the harvest, the wines are blended with other years and bottled (to obtain perfectly balanced blends). The composition varies depending on blends and appellations, always following the same basic Blanquette (90% Mauzac minimum) and Crémant (60 % Chardonnay + Chenin Blanc + Mauzac). At harvest time natural yeasts then begin their work: they transform the remaining sugar into alcohol and CO ². The birth of the bubble is very aromatic during this second fermentation. The bottles will age while lying for 2 to 5 years, depending on the blend, for better flavor and taste. After this rest period, the bottles are turned by hand (remuage) on special racks in our cellars to facilitate the extraction of natural deposits (minerals, yeast ...) that accumulate in the temporary cap. We are the only producer in Limoux practicing manual ‘remuage’ which characterizes all the quality and tradition of our winemaking.

Abbaye Sainte-Marie d'Alet (more commonly known as the Abbey of Alet les Bains), is situated between the Aude river and the Pyrenees mountains in the heart of Cathar country. Saint Polycarp (Saint Policarpi in Occitan), has 165 inhabitants (census 2009), which are called Saint-Polycarpiens. The village of Saint-Polycarpe is located on the Meridian Green, the Paris Meridian. The Saint-Polycarpe brook crosses the tributary of the Aude 7 km from Limoux, 8 km from Saint-Hilaire, 24 km from Carcassonne, 31 km from Mouthoumet and 42 km from Lagrasse. The name of Saint Polycarp given to the abbey will also become the name of the village, the name of the primitive village being Rivograndi: Rieugrand. This patronage of Saint Polycarp suggests that the abbey held relics of the saint of Asia Minor, where he was born in the late 1st century AD. Bishop of Smyrna, today Izmir in Turkey, this church father was martyred in 155 under Marcus Aurelius, accused of atheism because he refuses to sacrifice to the gods officials, among which is the emperor. Condemned to the stake but miraculously spared by the flames, he then stabbed...
