Hotel de la Cité - Carcassonne

Late in the evenings, as daytime visitors head home, a magical atmosphere cloaks Carcassonne.

As your footsteps echo over the cobblestones, you’ll soon discover why Hôtel de la Cité by Orient-Express is the ideal base from which to explore this fairytale city.
Hotel de la Cité - Carcassonne
Set within the circular walls of the citadel and amidst the most romantic gardens, the hotel presents each guest with a unique experience.

Whether sipping wine under the towering trees or sampling some of the region's most cutting-edge cuisine at La Barbacane.

Hôtel de la Cité offers a magical mixture of the medieval and the contemporary.

Hôtel de la Cité is perfectly placed to explore the region’s Cathar castles, the lush vineyards of the Languedoc-Roussillon province and the Canal du Midi, a UNESCO World Heritage site...
Built in 1909, Hôtel de La Cité was extended in 1913 and 1927. In the 1920s, it became the stop-over when travelling between Nice and Biarritz or between Biarritz and Barcelone, and thus earned the reputation of becoming a highly fashionable place to meet. Skilfully combining the greatest comfort with the elegant tradition of the grand hotels, the hotel makes its guests feel at home. In 2010, the hotel was awarded its fifth star – there are only three such hotels in Languedoc-Roussillon. In August 2011, the hotel was acquired by Christine Pujol, a native of Aude, and owner of several charming hotels in Carcassonne – thereby opening a new chapter in Hôtel de la Cité’s history, going back over a hundred years.

The Hôtel de la Cité's gastronomic reputation rests on its Michelin-starred restaurant La Barbacane. Located in the heart of the hotel, its neo-Gothic room features magnificent fireplaces, high ceilings and cathedral chairs.

In 1998, Jérôme became Sous-Chef at Hôtel de la Cité, working as part of Chef Franck Putelat’s team. He travelled extensively to promote the hotel and its French haute cuisine in Madeira, Washington, Tallinn, Riga, Tokyo, St. Petersburg, Moscow, St. Martin and in Rio de Janeiro. His hard work was rewarded in 2006 when he was appointed Executive Chef. Jérôme has taken part in several top-level culinary competitions. In December 2005, he won the prestigious “Pierre Taittinger International Culinary Award”

Corbières

A.O.C. Corbières

The Corbières is one of the wildest areas of France with one of the lowest population densities. It is picturesque with wine growing areas alternating with garigue and mountainous countryside. It is located mainly in the Aude département and partly in the Pyrénées-Orientales département. The River Aude borders the Corbières to the west and north. To the south is the River Agly and to the east the the Mediterranean Sea. The name Corbières comes from "cor" a pre-Celtic word meaning "rock" and "berre" from the River Berre which runs through Durban. The eastern part of the Corbières with its Etangs, borders the the Mediterranean Sea and is called the Corbières maritimes. It has its own distinctive climate and characteristic vegetation known as thermomediterranean vegetation...

Minervois

A.O.C. Minervois

The Minervois is one of the most ancient vineyards of the Mediterranean region. Indeed, its land was chosen by the Romans as providing ideal conditions for the first vines they planted in Languedoc Roussillon. Its name comes from the ancient city of Minerve, a stronghold built by the Romans and dedicated to the goddess Minerva. Since that time, many amphora shards and vestiges of cellars have been discovered, testimony to the importance of this vineyard. The region, austere in winter and redolent with sunshine in summer, has survived over the centuries its invasions by barbarians, Arabs and Christians. The essence of Minervois la Livinière, as in so many Midi appellations, is the blend; a marriage of different grape varieties that adds subtle nuance of flavour to the whole. Natural alcohol level must reach a minimum of 12% without enrichment (so no chaptalisation) and maximum yield is a modest 45 hl/ha. Ageing may be in barrel or vat, and unlike basic Minervois, the wine must be bottled at source, so cannot be sent off to a négociant elsewhere in France...
