Cabardès

The Cabardès region is situated to the west of Languedoc and to the south of the central massif, a geologist's dream, balanced between east and west, the sun and the coolness, the heathland and the mountain. It is here that the winds cross. They bring the intense mediterranean heat necessary for southern "cépages" (grape types) such as syrah and grenache, and the cool atlantic humidity for the ocean "cépages": merlot, cabernet-sauvignon, cabernet-franc, cot and fer-servadou, to prosper. The vineyards and wines of Cabardès have been recognized as AOC since february 1999. The quality of the grapes, the wine-making, the blending of the "cépages" and the keeping of the wines has allowed us to obtain the best balance between fruit and structure, fullness and complexity, intensity and elegance. Cabardès assembles 30 châteaux and domaines over 500 productive hectares spread amongst 18 villages. 20000 hectolitres are produced each year,of which 60% are exported....


Malepère

A.O.C. Malepère

The Malepère region was awarded AOC status on May 2nd 2007. It is a hilly area south-west of the city of Carcassonne which is included in the appellation along with 31 other towns and villages. Although the area claims a great history of wine making it was in the 1970’s that the vineyards began to be replanted and VDQS status was granted. VDQS is the intermediary wine designation between Vin de Pays and AOC and is a testing ground for would-be AOC’s to prove that wines from all the producers share a common personality before they can be awarded full AOC status. Although an obscure region the Malepère is well worth a visit and offers a very different terrain to the more recognizable Languedoc appellations. There are many interesting medieval circular villages to visit. They were built this way to form ramparts to act as protection for the inhabitants. The Cathar religion was strong here and the area is immersed in history and folklore...

Located in the heart of the Montagne Noir, at the junction of three departments (Haute-Garonne, Tarn and Aude), the basin of St. Ferreol is for generations, one of the favorite rendezvous of Recreational enthusiasts and outdoor. Its beach, its supervised swimming, water sports, fishing preserve its and its picnic areas are forgetting that Lake St. Ferreol is primarily a retention pond, the centerpiece of the supply network of channel noon! It is in this natural setting that from the early 19th century, romantic gardens were gradually developed. In 1855, the installation of the water jet endowed them with a refreshing atmosphere for strolling and loitering. Instead of approval, the gardens of the museum can also discover the hydraulic principles that govern the supply of canal water. The "ps" (available to groups by reservation), lets get to the heart of the dam and reach the control system and valves installed in 1829. They top a second gallery, "the vault drain", inaccessible to the public and which is currently the main flow of water in the basin....

Its Saturday extravaganza truly is a superb example of a French general market at its very best. Revel has a huge Saturday morning market which is attended by both locals and visitors, some of whom have travelled considerable distances to savour the atmosphere and the goods on offer here. The hub of the market, the food and fresh produce stalls, are situated in the central market square, which is a gorgeous covered arcade, typical in its bastide styling, yet more beautiful than most. The market spreads out around the town, but the heart is most definitely here in this very traditional square...

Bram is a commune in the Aude department in the Languedoc-Roussillon region in southern France. Bram is part of the old province of Lauragais, and is 790 km from Paris. The CD33 road to the village follows the Roman road, the Romans settling in the area because of a climate which balanced the warmth of the Mediterranean with the freshness of the Atlantic. In 60BCE, they began construction of Bram and called it Eburomagus. Roman remains suggest the town was less round than the current town. Eburomagus disappeared. The modern town was born in the 12th century, built around its fortress church. By the 17th century Bram had outgrown its walls and expanded in concentric circles...
