The Sainte Léocadie wine estate, situated in Aigne (centers around the old mediaeval nucleus, also called the "circulade" because of it's circular shape. ), falls under the Minervois appellation. The domaine is about 30 hectares large making a mosaic of terroirs. The heart of the domain is erected in a clos en pierre with capitelles, and inside, an old building. In the year 2002, Anne and Thierry created a winery and decided to follow in his great grandfather's footsteps.

Saint Leocadie was living in the 4th century at Toledo in Spain ; she has been a victim of Roman persecution against Christians and more especially of Dacien who performed with zeal and cruelty biddings coming from Rome. Her name appears very early in Aigne history; wisigothic necropolis, with in turn, gaves with bones inside; funeral vases, amphorae and tegulae.

It is one of the oldest places for worship…but nothing remains of the chapel of the past. Our great grand-parents, impressed by such a "rich in spiruality" past, erected Saint Léocadie's statue at the top of the building and then she takes care to the millennium wineyard.

Terroirs in Minervois
Les mourrels: A succession of layers of sandstone, limestone and marl; the result is a series of edges with scrubland on the top dividing depressions with slopes (sometimes steep) where grows the vineyard. This area is one of the hottest in Minervois. The vineyard takes place in this méditerranean landscape when the soil is deep enough to be cultivated.

  December to march, is the moment during which the vines are pruned: if you leave all of the growth from the previous year it will have buds on it, which means you'll have a huge crop the following year. As the vine can't produce enough energy to ripen an unregulated crop, it'll be poor quality.

After the appearance of buds, then flowering… the seeds begin to color; they ripen (July, August), then enter the period of maturation (August, September) during which they fill with sugar and lose their acidity, which is measured by simple analytic tests. It's time for harvest; we are in september...

Grapes are harvested "by hand" all day long and are used for "carbonic maceration" a winemaking technique, often associated with the French wine region of Beaujolais, in which whole grapes are fermented in a carbon dioxide rich environment prior to crushing.

Early in the morning, grapes are harvested with the machine; transported to the winery, the grapes are removed from the stems and sent to the vats...

A.O.C. Minervois

The Minervois is one of the most ancient vineyards of the Mediterranean region. Indeed, its land was chosen by the Romans as providing ideal conditions for the first vines they planted in Languedoc Roussillon. Its name comes from the ancient city of Minerve, a stronghold built by the Romans and dedicated to the goddess Minerva. Since that time, many amphora shards and vestiges of cellars have been discovered, testimony to the importance of this vineyard. The region, austere in winter and redolent with sunshine in summer, has survived over the centuries its invasions by barbarians, Arabs and Christians. The essence of Minervois la Livinière, as in so many Midi appellations, is the blend; a marriage of different grape varieties that adds subtle nuance of flavour to the whole. Natural alcohol level must reach a minimum of 12% without enrichment (so no chaptalisation) and maximum yield is a modest 45 hl/ha. Ageing may be in barrel or vat, and unlike basic Minervois, the wine must be bottled at source, so cannot be sent off to a négociant elsewhere in France...

There are thousands of grape varieties contributing to a vast array of different wine styles with each variety having its own distinct flavours and characteristics. Varieties can be made uniquely to make a wine, in whch case the wine is known as a varietal, or collectively with other varities, when the wine is known as a blend. The soils and ‘terroirs’ in the Aude area are very varied, from Schist, Sandstone, Marl, Gravel, Pebbles, Limestone, to Granit and Alluvial soil; thus making many marvelous and different styles of wine. Also in this massive area are many different grape varieties, the reds include Carignon, Cinsault, Granache Noir, Syrah, Mourvèdre, Cabernet Franc, and Merlot. The whites, Chardonnay, Granache blanc, Picpoul, Marsanne, Roussanne, Vermantino, Mauzac, Chenin and Clairette...

L'Oulibou is a fascinating place to visit. Only 3.5 km from Mailhac, it produces some award winning oils and olives which can be sampled in the very mill where they have been made. You can also see the whole process that olives go through in order to make them into a wide variety of oils. The 'lucque' is one of the main olives of the Languedoc Roussillon area and it under goes some magical transformation within the walls of this traditional mill. 2 kilometres from Bize, just off the main road between Beziers and Carcassonne, you will find l’Oulibo, a cooperative that produces some of the best olives and olive oils in France. Bize is part of the Minervois region that includes the village of Minerve 10kms to the north which was the site of a famous siege by Simon de Montfort and the consequent martyrdom of the Cathars. Nearby are Beziers (35 minutes) and Narbonne (25 minutes) with cathedrals, excellent markets, shops, museums, and much more...
