A slice of heaven located less than 25 minutes from Perpignan, between the Cathar Country and Catalan Region. Very comfortable rooms created “in” and “above” the wine vats of the old cooperative winery dating from 1925. This is a quest, and I would even say a perpetual utopia… A ‘pickles’ cuisine with extra flavour and clever twist, and always characterized by a sense of balance and search for precision.”

Laurent creates with his wife, Julie who is the Head Pastry Chef (trained under Dusseau and Gazagnaire), both a personal and an unconventional cuisine with the greatest respect for local traditions and environment whose subtleties and originalities are acquired with passion.

With its original height that has been maintained, this important centre of local gastronomy stands out for its architecture and decoration: an original Eiffel style frame structure, a tree planted in the soil, natural materials, remains of the former cooperative winery that has been preserved… In summer, on the terrace in the shade of an olive tree, guests are invited to linger and savour the hotel’s own wines, as well as the wines from other wineries, matching with Laurent Lemal’s gastronomic poetry…

  Lac de Montbel covers 570 hectares and is fed by the clear water of the Hers. It is a favourite spot for migratory birds and a good place to watch other wildlife. With its forest surroundings and equipped beaches, this is a lovely place to unwind, while it also offers water-based recreational activities such as fishing, canoeing and kayaking, pedalo, boating and, of course, swimming! This route (difficulty average) starts at the old Chalabre station on the railway from Mirepoix to Lavelanet, now known as Voie Verte. The walk takes you along the L'Hers, you passing Lac de Montbel, go through two dams returns through the woods to the old station of Chalabre. It offers views of the Pyrenees and Lac de Montbel. Departure in front of the old station of Chalabre. Take the Voie Verte to the south. At the end of Chalabre, cross the old bridge over the l'Hers. Follow the Voie Verte and cross over another small bridge over the Hers. At the place called la Forge leaving the Voie Verte and take right towards Centre d'Art contemporain follow through La Croix d'Ourjac to Sainte-Colombe de l'Hers. Go right at Rue de la Yere later called Rue de Tilleuls, turn left at Rue de l'Ecole to immediately turn right to go into Rue Petit and cross over the bridge of l'Hers, then go left to take Chemin de la Chaussee...

He resumed in October 2009, the Restaurant Le Moulin de L'Evêque, run in collaboration with Dorota, wife of Polish origin. For cooking, we prefer and value the fresh produce. We change the card every week according to the local market, to offer a package including two to three choices of starters, main courses and desserts. This family-friendly, welcoming campsite has a lake-side setting right on the edge of the Lac de Puivert. Snack facilities and activities are available throughout your stay, and there are lots of walks leading from the campsite, as well as a nature discovery trail which skirts the nearby castle. For sportive holidaymakers the camp site offers excursion programmes, guided walks and various cycle routes. You can swim nearby in in a lake/recreational pond. You don't always have to cook, as the camp site has a snack bar and restaurant (with snack menu). The camp site also supplies fresh bread. You can also use the internet, as there is a WiFi point...

Puivert Castle, locally known as Château de Puivert, lies near the village with the same name, west of the town of Quillan in the Languedoc-Roussillion region in France. Of all the Cathares castles, Puivert Castle certainly is one of the best preserved. It was built in the 14th century. With its 35 meters high keep in which four splendid rooms are superimposed, its 6 towers incorporated in its enclosure wall, this castle dominates the old glacial lake of Puivert below. One of the rooms in the keep has very nice carvings of 8 characters with medieval musical instruments on its walls. You can climb to the top of the keep which offers a great view on the Quercorb plain to north, to the west of Montségur Castle with the summits of the Pyrenees behind it and to the east of the peak of Bugarach...

The Château de Montségur is probably the best known of all Cathar Castles. It is famous as the last Cathar stronghold, which fell after a 10 month siege in 1244. A field below the hill-top castle is reputed to be the site where over 200 Cathars were burned alive, having refused to renounce their faith. A building on this site sheltered a community of Cathar women at the end of the twelfth century. Early in the thirteenth, Ramon de Pereille the co-seigneur and Chatelaine, was asked to make it defensible, anticipating the problems to come. It is open to the public, as is a museum in the nearby modern village of Montségur. There is an entrance fee for both....

The Quercorb Museum, with its attractive displays, allows you to discover this fascinating little region. Visual and sound exhibits recreate everyday life in Quercorb at the beginning of the 20th century. The "instrumentarium" is resonant with music and displays nine musical instruments of the middle ages that have been reconstructed on the model of the sculptures of musicians in Puivert Castle. You can use headphones to listen to 9 Occitan troubadour "cansos" while you follow the words and medieval music reconstructed on goatskin parchment. In the museum orchard there are displays including a still and a collection of objects related to harvesting fruit and processing it into fruit brand...

The little town of Mirepoix lies in south-west France in the department of the Ariège, the traditional name for the part of the Ariège that is home to Mirepoix being the Pays D’Olmes. This is a very lovely part of France, and includes some of the beautiful mountains of the Pyrénées. Mirepoix is truly a place where you will want to linger. There can be few pleasures greater than the simple delight of sitting under one of the shady canopies formed by the overhanging houses that surround the square, sipping a coffee or a long cool drink and watching the world go by. The numerous bistros and cafés offer a variety of treats ranging from delicious pastries and gateaux to three course meals and a glass or two of the locally produced wines. The character of Mirepoix is quite distinctive and the town oozes charm. Half timbered houses line the central square, with their upper storeys overhanging the walkways below. During its long history, Mirepoix was nearly destroyed twice, by both floods and fire, but has been rebuilt and is now considered to be one of France’s prettiest towns...

Discover a cuisine rich of flavors in a pleasant environment. We offer from Friday to Sunday combined dishes from € 15.50. With as extra bonus a very pleasant atmosphere... "We had taken a lunch at Le Refuge Gourmand on the way back from a visit to one of the Cathar castles! The reception was very pleasant, the hostess is very friendly, it's like being welcomed by friends. The sangria was delicious. We ordered two combination platters, for my husband veal with morel sauce, a true pleasure and for me a stuffed squid in aioli tomato sauce served with french fries, green beans, tomatoes provencale, a real treat! If then the dessert ..... these alone are worth the trip! Very good value for money and great generosity and much more ... We have enjoyed!!!!"
