Dating from the 1920s, the Domaine Monastrel, a small, family estate, has produced renowned Minervois since the 1970s. Taken over in 2001 by œnologist Vincent Enaud and his wife, Brigitte, the vineyard is now being modernised and restructured. At present, it comprises 7 hectares of vines extending over cleared garrigue. Grapes are harvested by hand, and yields are limited to 35 hl/ha on average. The vines are planted on the south-eastern slopes of the Serre d'Oupia, the first foothills of the Montagne Noir (300 metres above sea level).

Millennia of erosion have created gentle slopes formed of limestone scree at the foot of the Serre. These are gravel soils, deep and well-drained. The climate is favourable to late grape varieties such as Carignan, the traditional vine of the Minervois, and Mourvèdre, a native of Spain. Gravel and sandstone soils, ancient alluvial deposits of the river Cesse. Terraces and pebbly slopes facing south, south-east. The Domaine Monastrel is engaged in a programme of reasoned agriculture. Practices which promote disease prevention are favoured. Moreover, a well-tended vineyard naturally better resists parasites and pests. Grass is grown around the vines to make them hardier and obviate the need for weed-killers.

 Le Domaine Monastrel est engagé dans un programme d’agriculture raisonnée. Les pratiques favorisant la prévention des maladies sont privilégiées.

Les traitements reconnus en agriculture biologique sont le plus souvent réalisés (soufre poudre ou mouillable, bouillie bordelaise…).

Les rendements sont limités à 35 hl/hectare en moyenne. Les vendanges sont manuelles. Le raisin, récolté en caissettes, est versé directement dans un égrappoir et tombe dans la cuve par gravité.

Chaque millésime est différent, savoir s'adapter le moment venu à l'état du raisin, son degré de maturité et à la météorologie, est un gage de réussite des différentes cuvées.

En rouge, les macérations durent 10 jours à 3 semaines suivant les cépages et le millésime. Une partie du Carignan est vinifiée par macération vendange entière (ou macération carbonique).

Les rosés sont obtenus en partie par saignée et en partie par pressurage.

Les blancs sont extraits par pressurage vendange entière.

Au Domaine Monastrel vous pourrez trouver également de l'huile d'olive d'Olivière, variété régionale reconnue par sa finesse et son fruit.

The Minervois is one of the most ancient vineyards of the Mediterranean region. Indeed, its land was chosen by the Romans as providing ideal conditions for the first vines they planted in Languedoc Roussillon. Its name comes from the ancient city of Minerve, a stronghold built by the Romans and dedicated to the goddess Minerva. Since that time, many amphora shards and vestiges of cellars have been discovered, testimony to the importance of this vineyard. The region, austere in winter and redolent with sunshine in summer, has survived over the centuries its invasions by barbarians, Arabs and Christians. The essence of Minervois la Livinière, as in so many Midi appellations, is the blend; a marriage of different grape varieties that adds subtle nuance of flavour to the whole. Natural alcohol level must reach a minimum of 12% without enrichment (so no chaptalisation) and maximum yield is a modest 45 hl/ha. Ageing may be in barrel or vat, and unlike basic Minervois, the wine must be bottled at source, so cannot be sent off to a négociant elsewhere in France...

There are thousands of grape varieties contributing to a vast array of different wine styles with each variety having its own distinct flavours and characteristics. Varieties can be made uniquely to make a wine, in whch case the wine is known as a varietal, or collectively with other varities, when the wine is known as a blend. The soils and ‘terroirs’ in the Aude area are very varied, from Schist, Sandstone, Marl, Gravel, Pebbles, Limestone, to Granit and Alluvial soil; thus making many marvelous and different styles of wine. Also in this massive area are many different grape varieties, the reds include Carignon, Cinsault, Granache Noir, Syrah, Mourvèdre, Cabernet Franc, and Merlot. The whites, Chardonnay, Granache blanc, Picpoul, Marsanne, Roussanne, Vermantino, Mauzac, Chenin and Clairette...

Don't let that put you off - if you want hearty, simple food, then this is the place for you. It's quite inexpensive as well, so that's always a bonus. The location, though - WOW. Situated on one side of the fabulous tree-lined Canal du Midi, the bridge over the canal is one of the biggest single-arch canal bridges I've ever seen. Add to that the fact that the restaurant faces the canal and has a shady patio out front and to the side, and you got possibly the most idyllic setting, with long evening sunsets and several boats put-putting past to add to the atmosphere. In all, a very pleasant experience, reasonably priced, and well served by friendly staff. Worth seeking out...
