On the southern slopes of the Montagne Noire, the clay-limestone soil of Cabardès, expresses its full potential on 12.50 hectares of our vineyard. Compositions of the grape varieties Merlot, Syrah, Cabernet Sauvignon and Franc, Grenache Black, Cot, Muscat, Viognier and Chardonnay allows us to produce wines of character and a certain typicity.

Located near the city of Carcassonne, the Domaine Loupia has owned for six generations. Our grandmother, Julie Aalbarel gave her name to the hamlet since our area is transferred from mother to daughter. Along with Philippe Pons, my husband, we took over the Domaine in 2000 and are very pleased to be able to continue such a beautiful heritage!

We produce certified biological AOP Cabardès red, but also white and rosé. In addition, we also produce a natural grape juice and Carthagène, a local specialty.

  Agriculture in harmony with its environment.

- Since 1974, we have made the choice to cultivate our vines without chemical fertilizers or synthetic herbicides, according to the Lemaire-Boucher method.

- The harmony between the soil and the plant is well respected for obtaining a quality wine, healthy and natural.

- Fertilization is ensured by the addition of organic matter (compost, manure ...) and the need for mineral fertilizers.

- The protection of the vineyard is done by the use of simple products (copper, sulfur) and biological control (bacilli) which respect the natural environment.

- Tillage is achieved by plowing and hoeing.

- Weeding is done mechanical (interceps Boisselet).

We work mainly manually (especially for harvest) to best comply with the rhythms of the land and vineyards.

The Cabardès region is situated to the west of Languedoc and to the south of the central massif, a geologist's dream, balanced between east and west, the sun and the coolness, the heathland and the mountain. It is here that the winds cross. They bring the intense mediterranean heat necessary for southern "cépages" (grape types) such as syrah and grenache, and the cool atlantic humidity for the ocean "cépages": merlot, cabernet-sauvignon, cabernet-franc, cot and fer-servadou, to prosper. The vineyards and wines of Cabardès have been recognized as AOC since february 1999. The quality of the grapes, the wine-making, the blending of the "cépages" and the keeping of the wines has allowed us to obtain the best balance between fruit and structure, fullness and complexity, intensity and elegance. Cabardès assembles 30 châteaux and domaines over 500 productive hectares spread amongst 18 villages. 20000 hectolitres are produced each year,of which 60% are exported....

Vin de Pays means 'country wine' to the French, but to outsiders it can mean New World with a French accent. These are the wines which the French authorities unreservedly allow to be labelled with the grape variety from which they were made. It is difficult to over-estimate the importance of this large and growing category of wines for the future of the French wine trade. The French themselves may have tended to see any Vin de Pays as distinctly inferior to any appellation contrôlée wine, whereas many of their customers abroad see the better Vins de Pays as good-value, user-friendly, sometimes high-quality non-conformist emissaries from the world's most revered wine producer....

A shaded terrace in summer, a group room and a dynamic team for you. A village restaurant that keeps its promises and contributes significantly to the attractiveness of this charming corner of the Cabardès. L'Ambrosia in Pezens is found in Aude in the Languedoc Roussillon region of France. The closest airport to Pezens is Carcassonne Airport (4 km). A new star is born, the young chef Daniel Minet and his equipe have their first Michelin star for fantastic food and very nice service. In terms of prices there are menus from 32 to 72 euros per person. Wines are not overpriced (for 30 euros you would get a nice bottle of wine)....
