Domaine de l'Herbe Sainte is located on two communes, Mirepeïsset and Sallèles-d'Aude Languedoc Roussillon (sunny region), 18km north of Narbonne (Aude department). Mirepeïsset, a name formed from the verb mirar, "to look, to contemplate, to admire" and peisset "small fish", possibly alluding to the nearby rivers (Hers, Cesse). Sallèles-Aude, this name comes from the Frankish saal, who became in old Occitan sala, meaning "fortified residence".

Herbe Sainte originates from "Herbo Santo," which means in Occitan, the whole lot of aromatic plants (Santolina, thyme, rosemary, etc.). These are plants that can be found by searching the scrubland.

Herbe Sainte is one of the names which means plants of the wormwood variety (Artemisia in Latin). They may have medicinal properties. By extension "Artemisia" means good health. "Artemisia" have always been used as a therapeutic plant. Artemisia absinthium (wormwood or absinthe officinale) and Artemisia pontica (Pontic wormwood). Other "Artemisia" vulgaris (common wormwood, St. John herb) Drancunculus (tarragon) arbronatum (lemongrass) annua (Chinese wormwood), campestris (field woodworms) camphorata (camphor), lactiflora, etc. Herbe Sainte is one of the names given over the centuries to the Arnica (Arnica montana), because of its rapid almost miraculous action.

On our vineyard, we have implemented a respectful and consistent wine production. This involves the implementation of stringent specifications that favour the integration of our mode of culture in the environment. This direction, economically viable, take into account consumer expectations and results in high quality products. The vineyard is followed by an outside technician who ensures compliance with our obligations and ensures improved traceability. Our goal is to ensure quality production. We strive to focus on methods and practices that limit parasite risks, maintain a high biological diversity of the vineyard's ecosystem and its surroundings, but also to reduce pollution of water, soil and air.

The Greuzard Family, Independent Wine Growers, cultivates its vineyards in full awareness of the environment to produce quality and healthy grapes, which when vinified give a convivial character to the wine.

As Independent Wine Growers, Domaine de l'Herbe Sainte, after bottling its production, markets its wines directly at the property, on sales fairs to individuals and exports its "Savoir Faire" and "The French Art of living".

Minervois

The Minervois is one of the most ancient vineyards of the Mediterranean region. Indeed, its land was chosen by the Romans as providing ideal conditions for the first vines they planted in Languedoc Roussillon. Its name comes from the ancient city of Minerve, a stronghold built by the Romans and dedicated to the goddess Minerva. Since that time, many amphora shards and vestiges of cellars have been discovered, testimony to the importance of this vineyard. The region, austere in winter and redolent with sunshine in summer, has survived over the centuries its invasions by barbarians, Arabs and Christians. The essence of Minervois la Livinière, as in so many Midi appellations, is the blend; a marriage of different grape varieties that adds subtle nuance of flavour to the whole. Natural alcohol level must reach a minimum of 12% without enrichment (so no chaptalisation) and maximum yield is a modest 45 hl/ha. Ageing may be in barrel or vat, and unlike basic Minervois, the wine must be bottled at source, so cannot be sent off to a négociant elsewhere in France...

There are thousands of grape varieties contributing to a vast array of different wine styles with each variety having its own distinct flavours and characteristics. Varieties can be made uniquely to make a wine, in whch case the wine is known as a varietal, or collectively with other varities, when the wine is known as a blend. The soils and ‘terroirs’ in the Aude area are very varied, from Schist, Sandstone, Marl, Gravel, Pebbles, Limestone, to Granit and Alluvial soil; thus making many marvelous and different styles of wine. Also in this massive area are many different grape varieties, the reds include Carignon, Cinsault, Granache Noir, Syrah, Mourvèdre, Cabernet Franc, and Merlot. The whites, Chardonnay, Granache blanc, Picpoul, Marsanne, Roussanne, Vermantino, Mauzac, Chenin and Clairette...

Outside dining along the canal... Restaurant Le Chat Qui Pêche in Argeliers looks fantastically rustic from the outside, and this is continued inside. Don't let that put you off - if you want hearty, simple food, then this is the place for you. It's quite inexpensive as well, so that's always a bonus. The location, though - WOW. Situated on one side of the fabulous tree-lined Canal du Midi, the bridge over the canal is one of the biggest single-arch canal bridges I've ever seen. Add to that the fact that the restaurant faces the canal and has a shady patio out front and to the side, and you got possibly the most idyllic setting, with long evening sunsets and several boats put-putting past to add to the atmosphere. In all, a very pleasant experience, reasonably priced, and well served by friendly staff. Worth seeking out...
