Cheerfully, but exactingly, Sophie Delaude pursues the transformation of this ancestral estate to catch up with the wines that count in Languedoc. And the results are already there!

Advancing through the vineyards to reach Pech Salamou, this place apart, almost unreal, where the Domaine des Souleilles has been running for 9 generations. A broad smile welcomes us in the middle of this enchanting landscape. Sophie loves the soil, her work, her vines, and it shows.

It’s been 16 years now that the young winemaker decided to return to the family estate after gaining training and experience in the world of viticulture. Her parents, Alain and Brigitte, had already understood the potential of this exceptional soil of Malepère and achieved major transformations of the estate, the fruit of 20 years of hard work to bring the wines of the estate to the level of quality they aspired to.

Sophie had, in turn, taken up the torch, with the same exactingness, bringing her enthusiasm, her creativity and her hard work, incessant, that of an independent wine grower: from traditional pigeage to complex choices with oenologues, from trimming the vines to disbudding; she’s involved in every aspect in order to continue to progress and to make her wines ever better. “2011 was a good year, the grapes are beautiful. I’m going to make a new vintage, with a traditional grape, little known, which will make a lovely wine!”

 The Domaine des Souleilles is at the centre of the AOP Malepère, opposite the Pyrenees. This is where Sophie Delaude grew up among the vines, where every year that passed was accompanied by a quatrain of different seasons. Sophie Delaude chose this work with her heart.

She spends hours working on the wines. Between the fermentation aromas and the forks, she listens to the marc forked, she listens to the busy yeasts in the silence of the wine cellar... This land that speaks through her, brings with it the happiness of being a winemaker in the heart of the Souleilles region!

The Domaine des Souleilles is located 8kms from Limoux in a hamlet called Pech-Salamou in the heart of the Malepère appellation. The hamlet dates back to 931 and was built on the site of a Gallo-Roman settlement. The horizon conjures up a dream of Tuscany with a succession of small hills planted in vines and punctuated with cyprus trees, the craggy blue line of the Pyrenees in the distance.

The terroir is on the foothills of the Aude Pyrenees, 250 metres in altitude. The 32 hectare vineyard is composed of various plots, all surrounding Pech-Salamou. All the vines are cultivated on a clay and limestone soil with sandstone outcrops.

Sophie Delaude, the property's young wine producer, has followed her father and her grand father to continue cultivating this superb vineyard and domaine which has been owned by the same family for the last six generations.

The Malepère region was awarded AOC status on May 2nd 2007. It is a hilly area south-west of the city of Carcassonne which is included in the appellation along with 31 other towns and villages. Although the area claims a great history of wine making it was in the 1970’s that the vineyards began to be replanted and VDQS status was granted. VDQS is the intermediary wine designation between Vin de Pays and AOC and is a testing ground for would-be AOC’s to prove that wines from all the producers share a common personality before they can be awarded full AOC status. Although an obscure region the Malepère is well worth a visit and offers a very different terrain to the more recognizable Languedoc appellations. There are many interesting medieval circular villages to visit. They were built this way to form ramparts to act as protection for the inhabitants. The Cathar religion was strong here and the area is immersed in history and folklore...

History tells us that Blanquette de Limoux, the world's first sparkling wine, dates as far back as 1531. At the time, the monks of the Benedictine abbey of Saint-Hilaire, near Limoux, were producing a somewhat unusual white wine in their cellars. Inside its glass flask, with a cork top - very rare for wines at this time - it acquired a natural sparkle. This was the forefather of the brut which is tasted today at the world's most prestigious tables. Since they first started cultivating vines, the growers of Limoux have aimed at maintaining the originality of the Blanquette de Limoux growth and developing its quality. The region's surrounding hills protect it from the extremes of the Mediterranean and Atlantic climates, with the area enjoying a microclimate particularly suitable for making quality white wine. The vines classified in the appellation are always planted at the top of southern-facing slopes, giving the best exposure. The soil here is shallow and sparse, full of chalk and stone....

With his wife Benedicte, he created his Tantine et Tonton restaurant, which quickly became a must in Limoux and La Haute Vallée de l’Aude. The family quickly grew: first in 2012, with La Tantina in the central square of Limoux, and in 2014 with The Bistro Tantine, Place Carnot in Carcassonne...
