The domain is situated in the hamlet of Babio, which is part of the La Caunette commune, in the heart of the Haut-Minervois region (5 km from the Minerve Cité). Perched on a hillside at 200 meters altitude in the foothills of the Black Mountain (Espinouse massif), the vineyards of the domain enjoy plenty of sunshine. Grapes of traditional varieties are grown in the 13 hectares of vineyards: Carignan, Grenache, Cinsault and Syrah for the reds and rosés.

The domain was taken over in 2003 by Cecile Weissenbach, a trained oenologist with a passion for wine. Emphasis is on the production of high-quality wine in small quantities, using methods of cultivation designed to produce healthy ripe grapes, with respect for the environment (limited use of fertilizer and pesticides). The grapes are harvested mainly by hand, and wine is produced in the traditional manner. The wines reflect the taste of the terroir by their depth and their finesse.

  In 2003, Cecile Weissenbach, a young woman in her 20s, made an enormous leap and took over Domaine de Babio in Minervois. Raised in Alsace with a passion for wine, Weissenbach studied biology in Paris and then got training inwinemaking. Then, suddenly, the opportunity to acquire Domaine de Babio arose, and she took it. Climatically and culturally, moving from Alsace to Minervois is like moving from well-heeled Connecticut to South Texas. But Weissenbach has thrived here, doing all the vineyard work and winemaking by herself, and ultimately producing delicious, polished wines from a rugged terroir.
 
With its dark color and beguiling nose of boysenberry, roasted game, white pepper and dark chocolate, the wine is powerful, savory and complex. A Rhône-style blend of syrah and carignan with a little grenache, its structure and underlying texture give it a sense of metallic strength and minerality, while firm but ripe tannins offset the pretty, generous fruit. The layers of flavors interweave to achieve a great, earthy complexity.

Even though the rich gaminess of this wine makes it especially well suited to lamb and beef — braises, stews and slow-cooked roasts — it is also flexible enough to pair with veal, pork, rabbit, feathered game and even poultry. It could be a prime candidate for the holiday table, complementing main courses like prime rib, rack of lamb, ham or turkey. Full-flavored vegetable dishes and composed salads, preferably embellished with a little cheese and/or smoked meat, are also excellent accompaniments. Serve slightly cool (64 degrees).

The Minervois is one of the most ancient vineyards of the Mediterranean region. Indeed, its land was chosen by the Romans as providing ideal conditions for the first vines they planted in Languedoc Roussillon. Its name comes from the ancient city of Minerve, a stronghold built by the Romans and dedicated to the goddess Minerva. Since that time, many amphora shards and vestiges of cellars have been discovered, testimony to the importance of this vineyard. The region, austere in winter and redolent with sunshine in summer, has survived over the centuries its invasions by barbarians, Arabs and Christians. The essence of Minervois la Livinière, as in so many Midi appellations, is the blend; a marriage of different grape varieties that adds subtle nuance of flavour to the whole. Natural alcohol level must reach a minimum of 12% without enrichment (so no chaptalisation) and maximum yield is a modest 45 hl/ha. Ageing may be in barrel or vat, and unlike basic Minervois, the wine must be bottled at source, so cannot be sent off to a négociant elsewhere in France...

The Curiosité de Lauriole is not a place where you can find something to buy or other interesting things, no it's really an insignificant piece of road with only an optical illusion. When we were there for the first time we looked everywhere for something special but did not find anything. After a little search on google we found an interpretation of this phenomenon. What you have to do to find the cache is just to find out the secret of the Curiosité de Lauriole. You can put your car at one of this coordinates and just set your gear in the free and leave the breaks... because of the optical illusion you will think the car goes that direction but it's not!!!

In the 13th century, the catholic princes, spurred on by Pope Innocent III, decided to put an end to Cathar influence in the provinces of Languedoc, Simon de Montfort came to impose the law and the catholic faith in Languedoc by force and fire. The local barons and knights then took up arms to defend their land, their faith and their culture. Following many years of combat, they lost their independence and were forced, in humiliation, to witness the martyrdom of the Cathars under their protection, who were burnt at the stake on enormous pyres...

During the months of July and August, Le Maquis is a holiday unique and joyful, often very lively at night, where there is a very friendly atmosphere. You can come alone (e), with friends or family, and be almost certain to leave pockets full address and cool memories. Located in the village of Cesseras in the Minervois Herault, Le Petit Causse has become the must-concert bar in the region. Founded in January 2014 by Bruno, the place was taken over in June 2015 by Simon and Colin. Friendly and smiling, Col welcomes you for a simple refreshment or for dining with kitchen Ducky. At the bar, even on the patio it is pleasant on sunny days in the shade of the trees and the sound of crickets, enjoying the famous fish and chips, pizza, le croque du Causse or homemade burgers. Musically, Le Petit Causse organizes concerts every Saturday from April to October, most every Thursday in July and August and a few other summer off-season nights ... Under the leadership of Fan, the program always offers quality and different music styles to be able to meet so many of you.
