We can accommodate you in our dining room (former stable guards channel) on our sunny and shady terrace, or on the platform at the edge of "green water of the Canal du Midi, for your dinner or lunch every day of the week.

Our menu will display a selection of representative products of the traditions of culture, farming and cooking of our region. These products, we have carefully selected from small artisan producers from around (in Minervois Aude department), we can offer guaranteed workmanship and flavor.

We present "nature", that means as simply as possible, with very little intervention from us to help you find the authenticity of their original flavors. Some are labeled "Aude Cathar Country", others were revealed by the approach "Aude Gourmet flavors, others are caused by our own research and enthusiasm, we hope you share with us....

Housed in the former home guards-channel, in the heart of Somail "historic", our Bed & Breakfast includes a single-bedroom and pretty bathroom for rent. Upstairs windows look directly onto the terrace and on the Canal du Midi.

Minervois

A.O.C. Minervois

The Minervois is one of the most ancient vineyards of the Mediterranean region. Indeed, its land was chosen by the Romans as providing ideal conditions for the first vines they planted in Languedoc Roussillon. Its name comes from the ancient city of Minerve, a stronghold built by the Romans and dedicated to the goddess Minerva. Since that time, many amphora shards and vestiges of cellars have been discovered, testimony to the importance of this vineyard. The region, austere in winter and redolent with sunshine in summer, has survived over the centuries its invasions by barbarians, Arabs and Christians. The essence of Minervois la Livinière, as in so many Midi appellations, is the blend; a marriage of different grape varieties that adds subtle nuance of flavour to the whole. Natural alcohol level must reach a minimum of 12% without enrichment (so no chaptalisation) and maximum yield is a modest 45 hl/ha. Ageing may be in barrel or vat, and unlike basic Minervois, the wine must be bottled at source, so cannot be sent off to a négociant elsewhere in France...

The cornerstone of organic farming is the soil. Maintaining a healthy, biologically active soil is the main objective for an organic farmer. In the vineyard it means cultivating the soil and planting cover crops, instead of applying herbicides. It means using natural fertilizers, such as composted animal manure, versus chemical fertilizers. Organic growers use no synthetic growth-regulators (such as Alar). As for not using pesticides, the organic alternative is to encourage natural predators of insect pests instead of using poisonous insecticides. Organic farmers promote "biodiversity" and allow plants other than vines to grow in and around the vineyard. Biodiversity helps regulate the vineyard soil by attracting beneficial insects, spiders and predatory mites, as well as provide shelter and food (pollen, nectar and other bugs), and replaces the need for chemical pesticides or insecticides. What cannot be fully controlled through biodiversity can still be managed organically, through the use of naturally occurring plant or mineral extracts, which leave no residues in the soil. In wet climates the main difficulty is raised by the use of copper sulfate against mildew, which leaves over time levels of copper in the soil that need to be monitored....

Come and visit the archaeological site of Ensérune lying ten kilometres from Béziers between the Languedoc garrigues and the shores of the Mediterranean, and discover one of the most important Gaulish villages in the South of France. The Oppidum d'Ensérune is an ancient hill-town (or oppidum) near the village of Nissan-lez-Ensérune, France, located between Béziers and Narbonne close to the D609 (formerly RN9) and Canal du Midi.  The fields at Montady, below the Oppidum was the swamp of Montady, which is now wedge shaped fields separated by irrigation ditches that converge in the centre. In the 13th century, the swamp was drained; the ditches allowed water to flow to the centre of the circular depression, from which it was conveyed through underground pipes several kilometres to the south. The drainage is still functional and remains in use....

We deliver bikes to you! You’ve got your bike - now where do you go? When you hire your bikes, you will be given a number of suggested routes together with large scale maps. The routes will always be on quiet roads and tracks and are graded according to terrain and distance. We are constantly adding trips starting at different villages and towns in the area. Some will be suitable for the whole family, whilst others are geared for road or mountain bike enthusiasts. Starting in 2012, a bicycle GPS is available to rent. This has all of the rides saved on it, and will be particularly useful for road bikes that don’t have mapholders.

L'Oulibou is a fascinating place to visit. Only 3.5 km from Mailhac, it produces some award winning oils and olives which can be sampled in the very mill where they have been made. You can also see the whole process that olives go through in order to make them into a wide variety of oils. The 'lucque' is one of the main olives of the Languedoc Roussillon area and it under goes some magical transformation within the walls of this traditional mill. 2 kilometres from Bize, just off the main road between Beziers and Carcassonne, you will find l’Oulibo, a cooperative that produces some of the best olives and olive oils in France. Bize is part of the Minervois region that includes the village of Minerve 10kms to the north which was the site of a famous siege by Simon de Montfort and the consequent martyrdom of the Cathars. Nearby are Beziers (35 minutes) and Narbonne (25 minutes) with cathedrals, excellent markets, shops, museums, and much more...
