Since I was very young I have lived my life at the rhythm of the vines, it was always obvious to me that I should be a wine-grower. As a child I accompanied my parents in the vineyard and driving the crawler tractor was one of my favourite games.

I decided to enter into working life as soon as was possible. My father passed his knowledge and experience down to me and instilled in me the love of a good job done. He worked as part of a cooperation, and I took over from him. A cooperation enables the use of effective vinification tools and provides access to qualified personnel. However, there was still a final step to take: develop my own products.

Wiebke and Alain Voroons created Le Château Wiala. I was impressed by their commitment and diligence in developing their wine. Taking over from them will be a challenge. Alongside my family and that of my partner, Philippe, we are fully committed to a quality approach.

We have all the ingredients to make exceptional products: varied and well preserved quality terroirs, adapted grape varieties and a well-equipped vinification cellar
.

The small size of the domaine enables us to tend to every step from the vine to the bottle; a craftsmanship which guarantees products of excellent quality.

I wish for my wines to reflect and express my passion for my work and for the local area in which I grew up...

  The Cellar
Housed in the village’s former distillery, the vinification cellar is mainly composed of small concrete vats, enabling the vinification to be adapted to every plot. To develop certain wines, barrels complete the vinification tools.

The vineyard
The vineyard stretches over 7.5 ha, including 7 ha of AOC Fitou and a small plot of Muscat de Rivesaltes. It is located in the communes of Tuchan and Paziols in the Haut Fitou, inland and equidistant between Narbonne and Perpignan. One of the great assets of the domaine is its soil. Two main plots established on complementary soil: rolled pebble, clay-limestone soil on the south facing hillsides and shale for the plots at a higher altitude.

Cultivation
The vines are cultivated using a global approach which is respectful of the plant and the environment:
Working the land.
Organic fertilisation.
Sustainable practices.
Harvesting by hand.

Vinification
Depending on the vintage, the Syrah and Carignan are aged in 400 and 225 litre barrels, made exclusively of oak. The barrels are renewed by one quarter each year which gives only a light woodiness to the wine. The wine benefits from natural micro-oxygenation which softens the tannins and background aromas. Before bottling the wine is lightly filtered and contains very little sulphite (<40 mg).

The first "Appellation d'Origine Contrôlée" wine of Languedoc-Roussillon, is only produced in nine small communal areas: FITOU, Caves, Treilles, Leucate and La Palme, which are all beside the sea, between Narbonne and Perpignan, and Cascastel, Paziols, Tuchan, and Villeneuve in the Corbières-Massif. Documents going back as far as Philip Augustus, Louis XIII and Louis XIV bear witness to the long-standing reputation of Fitou wines.Rabelais particularly appreciated "vin de Palme" which now has the "Appellation d'Origine Contrôlée Fitou" label. he vineyards in Fitou are set out on shaly and argilocalcareous soils with exceptional exposure to the sun. The countryside, whose relief consists in parts of hills and slopes and in others of plateaux, has the advantage of a particularly dry climate and is often swept by a high wind, the "Cers"...

Muscat de Rivesaltes is an appellation for the historic vins doux naturels from a relatively large area of Roussillon, in southern France, covering a total of 99 communes, and the majority of the Pyrenees-Orientales administrative departement. It is the largest single sweet wine appellation in France. Muscat de Rivesaltes wines are made predominantly from Muscat Blanc a Petit Grains and Muscat d'Alexandrie in varying ratios, according to the style desired by the individual producer. Muscat Blanc a Petits Grains is used to bring aromas of exotic and citrus fruits while Muscat d'Alexandrie brings a deeper bouquet of white flowers and ripe stone fruit. Collectively the wines show aromas of peach, lemon, mango and occasionally fresher, herbaceous notes like mint. These aromas all change with ageing, (which take place mostly in the bottle to preserve the fresher aromas) and the wines take on aromas of honey and baked stone fruits...

Fitou castle is a small, stone castle high on the hill above the village of Fitou, known in Europe for his wine. The village itself has dramatically changed last years, as the wines from the Fitou appellation got a better name, and more and more people from the North of France and even Germany, Switzerland or England, bought the houses in the region known for its beauty, closeness to the Mediterranean Sea and a nice climate. Several tiny town houses in Fitou have been nicely restored. You may see them walking through the village up to the castle. The castle’s museum, a slightly home made, may be attractive to visit by small children. They should not look only too close at the torture instruments. Still, they might like everyday court scenes and the alchemist’s workshop.....
