Chateau de Sérame is a magnificent area of 580 hectares located in a natural, wooded area, near the Canal du Midi. It's park features a generous and wild vegetation, rich in animal species and plant species typical for the region. It's 170 hectares of vineyards that are based on the AOC Corbières, Minervois and plots of IGP Pays d'Oc gives up a palette of remarkable terroirs of complexity and diversity. Seduced by promises of this unique site, Dourthe decided in 2002 to resume operation of the vineyard.

An ambitious investment plan then allows a complete restructuring of the vineyard. Replanting of noble varieties, increasing planting densities, reasoned protection: everything is done to transform the castle into a vineyard Sérame model, if benefiting from favorable climate of this beautiful region. To strengthen its commitment to respect the land and the preservation of natural heritage property launches in 2010 in its conversion to organic farming. 2013 is the first vintage to receive the organic label.

  Specialties

An ambitious investment plan has in record time resulted in an extensive restructuring of the vineyard. Research was carried out with the team of Denis Dubourdieu in order to determine the potential of the soil, to make the adjustment of grape varieties and the vagaries of the behavior applicable to the production of large wines possible.

The equipment was also modernized in the cellars where the new stainless steel tanks smaller capacities to let the vinification each parcel separately, taking into account the respect of the fruit.

Chateau de Serame produces Corbières and Minervois wines and a number of fragmented wines of very high level: "The Sleepers," "The Pégourier" and "The Icon", a jewel of the Languedoc.

With the conversion of the entire property to organic farming, efforts the owners with ongoing commitment and respect for the environment to biodiversity, which ultimately resulted in a first certified Bio vintage of the winery.

Corbières

A.O.C. Corbières

The Corbières is one of the wildest areas of France with one of the lowest population densities. It is picturesque with wine growing areas alternating with garigue and mountainous countryside. It is located mainly in the Aude département and partly in the Pyrénées-Orientales département. The River Aude borders the Corbières to the west and north. To the south is the River Agly and to the east the the Mediterranean Sea. The name Corbières comes from "cor" a pre-Celtic word meaning "rock" and "berre" from the River Berre which runs through Durban. The eastern part of the Corbières with its Etangs, borders the the Mediterranean Sea and is called the Corbières maritimes. It has its own distinctive climate and characteristic vegetation known as thermomediterranean vegetation...

Minervois

A.O.C. Minervois

The Minervois is one of the most ancient vineyards of the Mediterranean region. Indeed, its land was chosen by the Romans as providing ideal conditions for the first vines they planted in Languedoc Roussillon. Its name comes from the ancient city of Minerve, a stronghold built by the Romans and dedicated to the goddess Minerva. Since that time, many amphora shards and vestiges of cellars have been discovered, testimony to the importance of this vineyard. The region, austere in winter and redolent with sunshine in summer, has survived over the centuries its invasions by barbarians, Arabs and Christians. The essence of Minervois la Livinière, as in so many Midi appellations, is the blend; a marriage of different grape varieties that adds subtle nuance of flavour to the whole. Natural alcohol level must reach a minimum of 12% without enrichment (so no chaptalisation) and maximum yield is a modest 45 hl/ha. Ageing may be in barrel or vat, and unlike basic Minervois, the wine must be bottled at source, so cannot be sent off to a négociant elsewhere in France...
