Château Sainte Eulalie - La livinière
Near the Canal du Midi, its trees and its nonchalance, midway of the Narbonne-Roman city, city of this Aymerillot that sang Victor Hugo and Carcassonne-the-proud where fleet even the banner of Raymond Trencavel.

Here, the sun, exposure, climate and soil types have come together to give life to these unique wines, whose reputation is well established: the name “La Livinière”. Our earth and soul, our Minervois Pebble top soil with a high percentage of clay, chalk and manganese, exceptional terroir due to the nature of its soil and its exposure.

  Specialties

Since 2009, we are qualified « sustainable agriculture » by Qualité France, we hold 3 main principles: respect of nature, respect of the Human being and an economically viable production that we can leave to our children.

In this way, in 2006 we built a warehouse, in which the temperature is naturally controlled by a geothermal system which saves the use of an air conditioner, energy greedy. As well, we have also decided to lay stress on quality rather than quantity, and all our production is more highly valued in AOC (controlled origin appellation) Minervois and Minervois La Livinière. For the quality of our welcome, we have got the label: Qualité Sud de France: you can trust us!

We are proud of our region, and we know if you come here, you will appreciate our wines, but also our landscape, as you walk through the vineyards! We have created 2 treks among the vineyards, to discover the vines and the “garrigue” all around. If you have more time, you can walk and see old lime ovens : http://www.minervois-tourisme.fr/trace_Les-fours-a-chaux.html , or see an old millstone quarry, at the top of the mountain near us.

Minervois

A.O.C. Minervois

The Minervois is one of the most ancient vineyards of the Mediterranean region. Indeed, its land was chosen by the Romans as providing ideal conditions for the first vines they planted in Languedoc Roussillon. Its name comes from the ancient city of Minerve, a stronghold built by the Romans and dedicated to the goddess Minerva. Since that time, many amphora shards and vestiges of cellars have been discovered, testimony to the importance of this vineyard. The region, austere in winter and redolent with sunshine in summer, has survived over the centuries its invasions by barbarians, Arabs and Christians. The essence of Minervois la Livinière, as in so many Midi appellations, is the blend; a marriage of different grape varieties that adds subtle nuance of flavour to the whole. Natural alcohol level must reach a minimum of 12% without enrichment (so no chaptalisation) and maximum yield is a modest 45 hl/ha. Ageing may be in barrel or vat, and unlike basic Minervois, the wine must be bottled at source, so cannot be sent off to a négociant elsewhere in France...

The Grapes

The Grapes

There are thousands of grape varieties contributing to a vast array of different wine styles with each variety having its own distinct flavours and characteristics. Varieties can be made uniquely to make a wine, in whch case the wine is known as a varietal, or collectively with other varities, when the wine is known as a blend. The soils and ‘terroirs’ in the Aude area are very varied, from Schist, Sandstone, Marl, Gravel, Pebbles, Limestone, to Granit and Alluvial soil; thus making many marvelous and different styles of wine. Also in this massive area are many different grape varieties, the reds include Carignon, Cinsault, Granache Noir, Syrah, Mourvèdre, Cabernet Franc, and Merlot. The whites, Chardonnay, Granache blanc, Picpoul, Marsanne, Roussanne, Vermantino, Mauzac, Chenin and Clairette...

La Curiosité de L'Auriol (Lauriole)

La Curiosité de L'Auriol (Lauriole)

The Curiosité de Lauriole is not a place where you can find something to buy or other interesting things, no it's really an insignificant piece of road with only an optical illusion. When we were there for the first time we looked everywhere for something special but did not find anything. After a little search on google we found an interpretation of this phenomenon. What you have to do to find the cache is just to find out the secret of the Curiosité de Lauriole. You can put your car at one of this coordinates and just set your gear in the free and leave the breaks... because of the optical illusion you will think the car goes that direction but it's not!!!
