In the Languedoc region, overlooking the outstanding Canal du Midi (UNESCO), the Château de Paraza represents the guardian of an ancestral winemaking tradition. Its history is intimately linked to the history of France, most particularly which of the Languedoc region, and to its very rich past and historical remains dating back to the Roman occupation. Under Louis the XIVth, the Château of Paraza served as a base for the engineer Pierre Paul Riquet during part of the building of the canal connecting the Mediterranean sea to the Atlantic Ocean, thus named “Canal du Roy” (Canal of the King). The Danglas family grow 65ha of vines on the hillsides of the village of Paraza. Their wines offer a harmonious dialogue between strength and finesse and their Grands Crus are appreciated worldwide.

Before becoming essentially a wine producing business, over the centuries the property enjoyed many different activities including the cultivation of olive groves and cereals, as well as the breeding of large herds of sheep.

All used the Canal which carried large amounts of commercial traffic-transport of passengers or freight, by means of barges drawn by horses, or even, on occasion, by men.

Proud of our 100 meters long cellar, we like to share our passion for wine-making and for the specificities of our terroir and wines to all those who pass beyond our gate. With family or friends, we welcome you for relaxing moments of tasting and conviviality.

The Minervois is one of the most ancient vineyards of the Mediterranean region. Indeed, its land was chosen by the Romans as providing ideal conditions for the first vines they planted in Languedoc Roussillon. Its name comes from the ancient city of Minerve, a stronghold built by the Romans and dedicated to the goddess Minerva. Since that time, many amphora shards and vestiges of cellars have been discovered, testimony to the importance of this vineyard. The region, austere in winter and redolent with sunshine in summer, has survived over the centuries its invasions by barbarians, Arabs and Christians. The essence of Minervois la Livinière, as in so many Midi appellations, is the blend; a marriage of different grape varieties that adds subtle nuance of flavour to the whole. Natural alcohol level must reach a minimum of 12% without enrichment (so no chaptalisation) and maximum yield is a modest 45 hl/ha. Ageing may be in barrel or vat, and unlike basic Minervois, the wine must be bottled at source, so cannot be sent off to a négociant elsewhere in France...

There are thousands of grape varieties contributing to a vast array of different wine styles with each variety having its own distinct flavours and characteristics. Varieties can be made uniquely to make a wine, in whch case the wine is known as a varietal, or collectively with other varities, when the wine is known as a blend. The soils and ‘terroirs’ in the Aude area are very varied, from Schist, Sandstone, Marl, Gravel, Pebbles, Limestone, to Granit and Alluvial soil; thus making many marvelous and different styles of wine. Also in this massive area are many different grape varieties, the reds include Carignon, Cinsault, Granache Noir, Syrah, Mourvèdre, Cabernet Franc, and Merlot. The whites, Chardonnay, Granache blanc, Picpoul, Marsanne, Roussanne, Vermantino, Mauzac, Chenin and Clairette...

We deliver bikes to you! You’ve got your bike - now where do you go? When you hire your bikes, you will be given a number of suggested routes together with large scale maps. The routes will always be on quiet roads and tracks and are graded according to terrain and distance. We are constantly adding trips starting at different villages and towns in the area. Some will be suitable for the whole family, whilst others are geared for road or mountain bike enthusiasts. Starting in 2012, a bicycle GPS is available to rent. This has all of the rides saved on it, and will be particularly useful for road bikes that don’t have mapholders.

This replica of a 19th-century traditional river barge was built to play a role in the French television series La Rivière Espérance. It sails on three canals: the Canal du Midi, the Canal de Jonction and the Canal de la Robine. It offers travellers who want to recapture the authentic feel of canal cruising a chance to discover the wonders of the Canal du Midi... People come here to live one moment at a boat out of the ordinary! For it is especially user-friendliness in question. "La Capitane" navigates from the Easter holidays to autumn holidays. It offers cruises with 1:30 and passing through a lock for groups up to 50 people, cruises for half day and full day (see prices). In case of rain a sun awning shelters you...

The " Café du Port" is a "Slow Food" Bistrot. It is open daily during the season (Spring to October). Our "Cuisine du Marché" is Mediterranean. In our dishes we use the best and freshest regional and seasonal products. All our food is prepared fresh and "in house". Every dish is made to order. We offer sophisticated and simple wines of the region: Minervois, Corbières, Languedoc. We aim at offering good meals with the subtle tastes and pleasant fragrances of the "terroir", presented nicely in surroundings reflecting the south....

Le Somail is a port on the Canal du Midi built in the seventeenth century. It’s near the town of Ginestas in the Minervois and these days is a rapidly expanding village. Originally it was a small hamlet around the port itself but today it’s something of a tourist attraction. Other attractions include a brightly-painted barge which is a floating grocery store and an amazingly huge emporium of second-hand and antique books. They profess to be able to get any book you’d like to order – and in any language. It’s quite fascinating watching the pleasure craft go by whilst eating on the banks of the canal. We finished our day by taking a little motor boat (it was a little motor, as well as a little boat…) for an hour. The peace and stillness of the Canal were lovely but we did also enjoy squinting into the portholes of some of the more luxurious boats moored along the banks…
