The Château de Gourgazaud, sheltered by the lower slopes of the Montagne Noire, was one of the pioneers in the development of top-quality wines from the Minervois.

The Château is mentioned on maps from the 17th century. Its vineyard, covering an area of 100 hectares, shelters a wide range of grape varieties, producing red or white wines: Syrah, Mourvèdre, Cabernet Sauvignon, Viognier, Chardonnay and Sauvignon. For every grape grower, each passing season is a cause for speculation and concern through to harvest time. Will nature's elements, in the form of rain, frost, hail and sunshine, unleash their sometimes turbulent but more often beneficial forces in line with the seasonal calendar.

In some ways, we might be likened to mariners whose sails are alternately filled with the great Le Cers wind blowing in from the west or the humidity- and rain-filled gusts of Le Marin. The rains in autumn and early winter help replenish the land's water reserves while the chilly months of December, January and February offer the vine some welcome respite from periods of frenetic growth...

The Minervois is one of the most ancient vineyards of the Mediterranean region. Indeed, its land was chosen by the Romans as providing ideal conditions for the first vines they planted in Languedoc Roussillon. Its name comes from the ancient city of Minerve, a stronghold built by the Romans and dedicated to the goddess Minerva. Since that time, many amphora shards and vestiges of cellars have been discovered, testimony to the importance of this vineyard. The region, austere in winter and redolent with sunshine in summer, has survived over the centuries its invasions by barbarians, Arabs and Christians. The Minervois is situated at the southern extremity of the Massif Central, between Béziers and Carcassonne. It takes the form of a vast amphitheatre, facing due south towards the Pyrenees and backing on to the Montagne Noire, surrounded by olives and holm oaks. The vineyards of the appellation cover 4,500 hectares, situated on ancient terraces and slopes exposed due south. The chalky and clay and chalk soils date from the Miocene era (tertiary). 45 villages and towns in the Aude département, and 16 in Hérault make up the Minervois appellation. Natural subregion of the Minervois, which extends to the west of the "Serre d'Oupia" and to the east of the mountains, its principal characteristic is its climate. This geographical perimeter defines an area of 2,600 hectares called Le Petit Causse which provides exceptional conditions for wine growing. Vineyards were first planted here by the Romans, on the land of La Livinière, where several dozen villas can be found, one of which, Cella Vinaria (or wine cellar) gave its name to the village.

Its name comes from the ancient city of Minerve, a stronghold built by the Romans and dedicated to the goddess Minerva. Since that time, many amphora shards and vestiges of cellars have been discovered, testimony to the importance of this vineyard. The region, austere in winter and redolent with sunshine in summer, has survived over the centuries its invasions by barbarians, Arabs and Christians. The essence of Minervois la Livinière, as in so many Midi appellations, is the blend; a marriage of different grape varieties that adds subtle nuance of flavour to the whole. Natural alcohol level must reach a minimum of 12% without enrichment (so no chaptalisation) and maximum yield is a modest 45 hl/ha. Ageing may be in barrel or vat, and unlike basic Minervois, the wine must be bottled at source, so cannot be sent off to a négociant elsewhere in France...

There are thousands of grape varieties contributing to a vast array of different wine styles with each variety having its own distinct flavours and characteristics. Varieties can be made uniquely to make a wine, in whch case the wine is known as a varietal, or collectively with other varities, when the wine is known as a blend. The soils and ‘terroirs’ in the Aude area are very varied, from Schist, Sandstone, Marl, Gravel, Pebbles, Limestone, to Granit and Alluvial soil; thus making many marvelous and different styles of wine. Also in this massive area are many different grape varieties, the reds include Carignon, Cinsault, Granache Noir, Syrah, Mourvèdre, Cabernet Franc, and Merlot. The whites, Chardonnay, Granache blanc, Picpoul, Marsanne, Roussanne, Vermantino, Mauzac, Chenin and Clairette...

They serve well constructed meals, menus with choices & a la carte served with very reasonabley priced local wines. The warm welcome of the bosses, the decor classy and sober, daily menu renewed every day, garden products ... and the wine list at very reasonable rates. The gourmet menu (starter, main dish and dessert) is a feast! Opportunity to purchase wines from areas at the end of the meal. An address that we will refile word of mouth....

Apart from the abbey, the attraction of Caunes lies in its rich historical and architectural heritage. The façades of the buildings are adorned with numerous architectural features dating from the 15th and 18th centuries. Remains of the fortified walls which surrounded Caunes can be seen on a walk through the village. Other more recent monuments which reveal a way of life and traditions now dying out are also worthy of mention, such as the old wash houses, the irrigation channel and the cobbled lanes....

The Curiosité de Lauriole is not a place where you can find something to buy or other interesting things, no it's really an insignificant piece of road with only an optical illusion. When we were there for the first time we looked everywhere for something special but did not find anything. After a little search on google we found an interpretation of this phenomenon. What you have to do to find the cache is just to find out the secret of the Curiosité de Lauriole. You can put your car at one of this coordinates and just set your gear in the free and leave the breaks... because of the optical illusion you will think the car goes that direction but it's not!!!


La Grande Fontaine

Located just down the hill on the main street, inside this is the local bar, while outside is a gathering place for tourists. A morning coffee can be fun. Buy the pastries across the street at the boulangerie, then order coffee. There's no problem with eating breakfast that you've purchased elsewhere, because the Grande Fontaine doesn't sell pasteries. An omelet and salad at noon can be very enjoyable and inexpensive, and full meals are available both at noon and in the evening. Reservations not normally necessary...
