To the North-East of Carcassonne, in the central zone of Minervois, soil “Balcons de l'Aude”, this medieval strengthened farm is a winegrowing of only one holding of 158 ha with 58 ha of vines including 45 planted in Minervois. It is on this winegrowing with the multiple Mediterranean scents that Roland Augustin, helped of his two sons Yann and Loïc, mature with a care meticulous person of the intense, complex and expressive wines. 

For better understanding the specificity of each vintage of Château Fabas, it is necessary to know of it the origins, type of vines and the type of maturing.

The Winegrowing is pressed on a decoration of hillocks exposed to full midday, witness of the old relief to the very strong slopes where no culture is possible, only the pines of Alep and the Mediterranean vegetation is clutched on the red grounds of the hills. The vines are spread out over two levels over a reversed relief, the high terraces with the oldest grounds and the low terraces with the youngest grounds. The grounds are argilo-limestones, in the tops, the flint levels on the terraces, and the sandstone on the slopes.

Rich in history and tradition, Chateau Fabas is a leading force in the Minervois region. It was once a fortified farm with a religious and farming community grouped around a small church.

It is on this Estate with its delightfully Mediterranean feel that Roland Augustin and his family craft their intense, complex, expressive wines with lavish care.

These wines are the expression of the land on which they are grown - natural, honest and authentic - and the Augustin family puts every effort into bringing out all the exceptional riches of the vines and the soils, always seeking to achieve the perfect balance between elegance and power.

Le Mourral Rouge Minervois is aged in oak which increases its ability to age. It's a great food wine that will make its presence known against the darkest and most pungent of sauces.

The Minervois is one of the most ancient vineyards of the Mediterranean region. Indeed, its land was chosen by the Romans as providing ideal conditions for the first vines they planted in Languedoc Roussillon. Its name comes from the ancient city of Minerve, a stronghold built by the Romans and dedicated to the goddess Minerva. Since that time, many amphora shards and vestiges of cellars have been discovered, testimony to the importance of this vineyard. The region, austere in winter and redolent with sunshine in summer, has survived over the centuries its invasions by barbarians, Arabs and Christians. The essence of Minervois la Livinière, as in so many Midi appellations, is the blend; a marriage of different grape varieties that adds subtle nuance of flavour to the whole. Natural alcohol level must reach a minimum of 12% without enrichment (so no chaptalisation) and maximum yield is a modest 45 hl/ha. Ageing may be in barrel or vat, and unlike basic Minervois, the wine must be bottled at source, so cannot be sent off to a négociant elsewhere in France...

There are thousands of grape varieties contributing to a vast array of different wine styles with each variety having its own distinct flavours and characteristics. Varieties can be made uniquely to make a wine, in whch case the wine is known as a varietal, or collectively with other varities, when the wine is known as a blend. The soils and ‘terroirs’ in the Aude area are very varied, from Schist, Sandstone, Marl, Gravel, Pebbles, Limestone, to Granit and Alluvial soil; thus making many marvelous and different styles of wine. Also in this massive area are many different grape varieties, the reds include Carignon, Cinsault, Granache Noir, Syrah, Mourvèdre, Cabernet Franc, and Merlot. The whites, Chardonnay, Granache blanc, Picpoul, Marsanne, Roussanne, Vermantino, Mauzac, Chenin and Clairette...

Situated 2km from Caunes, Notre Dame du Cros is a remarkable site with a chapel dedicated to the worship of the Virgin Mary. Following a miraculous cure by the spring water, three small dry stone chapels were built on a steep slope with three statues, the Virgin Mary, Saint Joseph and Saint John. This is the origin of the pilgrimage of the Cros. A larger chapel had to be built as the number of devotees grew. Pilgrimages and processions were regularly organised to coincide with the feasts of the Assumption and the Nativity and the relics of the Caunes martyrs were associated with processions asking for rain, for the protection of the harvest etc. Religious rituals were also observed during Easter week. A few pilgrimages and celebrations have survived to the present day, specifically on 15 August and 8 September. Inside the church, the chancel is lavishly decorated with paintings framed with marble and gilded wood and the beautiful communion table, pulpit and font are all made of marble...

The Walled City of Carcassonne is known first and foremost as a fortified medieval town; but this rocky outcrop has been occupied by man since the 6th century B.C., first as a gaul settlement, then as a Roman town fitted with ramparts as early as the 3rd and 4th centuries A.D. On the western face of this primitive fortification rests the castle, built in the 12th century by the vicomtes Trencavels.In the early 13th century, Carcassonne was taken by Simon de Montfort during the Albigensian Crusade, then annexed to the royal estate. Fortification works lasted throughout the 13th century, with the construction of the outer wall and the modernisation of the inner rampart, making this place an impregnable fortress. The Cité lost its strategic importance after the signing of the Pyrénées Treaty in 1659. In the second half of the 19th century, it underwent a major restoration project supervised by Eugène Viollet-le-Duc and was included by UNESCO in the World Heritage List...
