Château Coupe-Roses is situated in La Caunette, little and beautiful village in Minervois, just close to the Montagne Noire (Black Mountain litterally).
Our vines thrive on wide limestone uplands. Between 250 and 400m, in a suitable climate for aromas and acidity preservation, we are working our vines in organic production. Wine quality start in vines.

With this thought are following our cultural practices : soil work is primordial, it allows vines to durably settle in its environment. Organic treatments ensures the preservation of an ecosystem. All this elements are giving a very unique raw material, which will be transcend with our work in the cellar. We invite you to discover our sensorial poetry universe. It belongs to you to come and share this universe with us.

Vinification is obviously related to quality of the grapes. We make our possible to work our vines the best way, this way the vinification goes without problems. We promote quality of grapes, which has to be ripe. The harvest date is chosen depending on sugar and acidity quantities. We make plot selection depending on specific years climate. Once the grapes are in our cellar, vinifications can start...

  Specialties

Red vinification
The grapes are first destemmed and crushed, as slowly as possible to avoid juice oxydation. The grapes are then send into a tank with a marc pump. Once the tank is full, alcoholic fermentation takes place. We follow sugar evolution with a mustimeter (which gives you density of the juice) during the fermentation process. Extraction operations are used whenever we think it's the time. One the alcoholic fermentation is done, we wait for the malolactic fermentation to start (this fermentation lower the acidity). It's a very delicate process, because bacterias that allow it are very fragile. Finally, when the wine is done, we let it settle several months, and we rack it sometimes.

Rosé vinification
Rosé wines are created in two different ways, press and bleeding. For Grenache and Syrah, we proceed by bleeding. Like for the red vinification, the grapes are vatted. The juice will be extracted from the grapes and will stay in contact with the skin during maximum 12h. This contact allow the colour and aromas to go into the juice. After some time, we open the valve and pump some of this juice. It will make a bleeding Rosé, which is more profound, more colored than the press, but also more structured, et sometimes more aromatic. For Cinsault and Mourvèdre, we press as soon as the grapes arrived in the cellar. These grapes are crushed and stemmed, then pressed. The juice is then sent into a tank, where we will cool it at 6°C, and let it settle for 48h. After this time, we pump the clear juice, and we begin the fermentation process.

White vinification
The white grapes are destemmed, but not crushed, we do not want oxydation to ruin aromas. The grapes are then sent into the press. Once this one is full, we start the pressing, and we will separate "first" juices, and other juices. First juices are going into barrels (only for the Minervois Blanc), where they will process the fermentation. The others juices are going into a stainless steel tank. Before the bottling, the barrels are blended to the tank. Once the juice are separated, we cool the tanks at 6°C and wait 48h for the juice to settle. Then we pump the clear juice, which can start the fermentation. Usually, malolactic fermentation is not done for white wines, except for the barrels, because we like to keep a nice acidity, which is important to give balance to the wine.

Minervois

A.O.C. Minervois

The Minervois is one of the most ancient vineyards of the Mediterranean region. Indeed, its land was chosen by the Romans as providing ideal conditions for the first vines they planted in Languedoc Roussillon. Its name comes from the ancient city of Minerve, a stronghold built by the Romans and dedicated to the goddess Minerva. Since that time, many amphora shards and vestiges of cellars have been discovered, testimony to the importance of this vineyard. The region, austere in winter and redolent with sunshine in summer, has survived over the centuries its invasions by barbarians, Arabs and Christians. The essence of Minervois la Livinière, as in so many Midi appellations, is the blend; a marriage of different grape varieties that adds subtle nuance of flavour to the whole. Natural alcohol level must reach a minimum of 12% without enrichment (so no chaptalisation) and maximum yield is a modest 45 hl/ha. Ageing may be in barrel or vat, and unlike basic Minervois, the wine must be bottled at source, so cannot be sent off to a négociant elsewhere in France...

The Curiosité de Lauriole is not a place where you can find something to buy or other interesting things, no it's really an insignificant piece of road with only an optical illusion. When we were there for the first time we looked everywhere for something special but did not find anything. After a little search on google we found an interpretation of this phenomenon. What you have to do to find the cache is just to find out the secret of the Curiosité de Lauriole. You can put your car at one of this coordinates and just set your gear in the free and leave the breaks... because of the optical illusion you will think the car goes that direction but it's not!!!
