Welcome to Chateau Borie Neuve, a charming family winery situated in the Minervois countryside, just a stone's throw from the Canal du Midi and the city of Carcassonne.

The Chateau Borie Neuve, operated today by Mr. Bruno Correia, produces wines of Languedoc AOC Minervois (Cinsault / Grenache and Viognier, Roussanne, Syrah / Grenache).

Additionally, you will have the opportunity to taste our wines in our cellar AOC Minervois. Chateau Borie Neuve: AOC Minervois.

The Minervois appellation is produced in 45 communes of the Aude and Herault 16. The Minervois appellation is situated between Narbonne and Carcassonne in the departments of Aude and Herault limited by the River Aude and the other side of Black Mountain, the vineyard is crossed by the Canal du Midi Minervois name comes from the village of Minerva in the heart of the vineyard in the Herault.

  Specialties

The traces of man go back very far, a wren population has lived here long before our era. With the arrival of Imperial Rome, the whole region opens. The wine grows initially in the plains.

Its location in the High Minervois is done later when the monks undertook the reconquest of the country. The Minervois know the ravages of the Crusades with Simon de Montfort and the infamous head of Minerva, the Mecca of the Cathar.

With the eighteenth century, and general economic expansion, the Canal du Midi created by Pierre Paul Riquet, in turn marked the country (ranked by UNESCO World Heritage Site).

The name comes from the Minervois village Minerve, a historic site dating back to the Cathars. The Minervois is located just north of the Corbières. The first wines were introduced by Roman legionnaires. The wine of Minervois was already famous at that time. Cicero and Pliny were among the fans Minervois.

Minervois

A.O.C. Minervois

The Minervois is one of the most ancient vineyards of the Mediterranean region. Indeed, its land was chosen by the Romans as providing ideal conditions for the first vines they planted in Languedoc Roussillon. Its name comes from the ancient city of Minerve, a stronghold built by the Romans and dedicated to the goddess Minerva. Since that time, many amphora shards and vestiges of cellars have been discovered, testimony to the importance of this vineyard. The region, austere in winter and redolent with sunshine in summer, has survived over the centuries its invasions by barbarians, Arabs and Christians. The essence of Minervois la Livinière, as in so many Midi appellations, is the blend; a marriage of different grape varieties that adds subtle nuance of flavour to the whole. Natural alcohol level must reach a minimum of 12% without enrichment (so no chaptalisation) and maximum yield is a modest 45 hl/ha. Ageing may be in barrel or vat, and unlike basic Minervois, the wine must be bottled at source, so cannot be sent off to a négociant elsewhere in France...

There are thousands of grape varieties contributing to a vast array of different wine styles with each variety having its own distinct flavours and characteristics. Varieties can be made uniquely to make a wine, in whch case the wine is known as a varietal, or collectively with other varities, when the wine is known as a blend. The soils and ‘terroirs’ in the Aude area are very varied, from Schist, Sandstone, Marl, Gravel, Pebbles, Limestone, to Granit and Alluvial soil; thus making many marvelous and different styles of wine. Also in this massive area are many different grape varieties, the reds include Carignon, Cinsault, Granache Noir, Syrah, Mourvèdre, Cabernet Franc, and Merlot. The whites, Chardonnay, Granache blanc, Picpoul, Marsanne, Roussanne, Vermantino, Mauzac, Chenin and Clairette...
