This Bistro is one of the famous addresses of Homps. Here, friendliness and good humour are a must, simple dishes prepared using fresh ingredients are available, a fancy setting, a small room with modern decoration and a large terrace shaded by sunshades along the Canal du Midi. We come here to taste fine wines of the region carefully chosen by Jean-Christophe. Excellent Minervois rosé will be perfect to accompany tapas, verrines, slices of bread and the famous crusty duos, while a more full-bodied red of Corbières will be ideal with a board of meats or a grilled meat à la plancha. The white wine lovers will appreciate the wines of La Livinière, to take as from aperitif, and to follow with the daily dish, usually with fish. The desserts perfectly complete the meal, panacotta, crème brûlée, chocolate fondant. The reception of Virginia and Jean-Christophe will finally convince you to return as quickly as possible...

Minervois

A.O.C. Minervois

The Minervois is one of the most ancient vineyards of the Mediterranean region. Indeed, its land was chosen by the Romans as providing ideal conditions for the first vines they planted in Languedoc Roussillon. Its name comes from the ancient city of Minerve, a stronghold built by the Romans and dedicated to the goddess Minerva. Since that time, many amphora shards and vestiges of cellars have been discovered, testimony to the importance of this vineyard. The region, austere in winter and redolent with sunshine in summer, has survived over the centuries its invasions by barbarians, Arabs and Christians. The essence of Minervois la Livinière, as in so many Midi appellations, is the blend; a marriage of different grape varieties that adds subtle nuance of flavour to the whole. Natural alcohol level must reach a minimum of 12% without enrichment (so no chaptalisation) and maximum yield is a modest 45 hl/ha. Ageing may be in barrel or vat, and unlike basic Minervois, the wine must be bottled at source, so cannot be sent off to a négociant elsewhere in France...

These are the wines which the French authorities unreservedly allow to be labelled with the grape variety from which they were made. It is difficult to over-estimate the importance of this large and growing category of wines for the future of the French wine trade. The French themselves may have tended to see any Vin de Pays as distinctly inferior to any appellation contrôlée wine, whereas many of their customers abroad see the better Vins de Pays as good-value, user-friendly, sometimes high-quality non-conformist emissaries from the world's most revered wine producer....

Minerve has been selected as one of Les Plus Beaux Villages de France (‘The Most Beautiful Villages Of France’). Historically, the village has been the capital of the Minervois wine region. The main bridge leading into the village is closed to all passenger vehicles not owned by residents of Minerve. Of all of the original fortifications, only a slender octagonal tower, known locally as the Candela, survives. The village is situated on top of the gorge of the River Cesse in a naturally strong defensive position. Near the village the river disappears underground in large, naturally-carved tunnels....

A place, a history, a passion ... Cross the aisle vault, lined tanks of old Verrees, enter the heart of our cave and visit the museum. Follow the marked route and discover the old tools, cooperage, carriages and wagons old. The Castle of Ventenac was erected in the eighteenth century on the foundations of an ancient castle. The name of Ventenac is its etymology in Roman times: Villa Ventenachus. Castrum Venthenacum was taken in the twelfth century by Simon de Montfort at the time of the Cathars. This is the nineteenth century that Ms. Seguy Saint Siran built the castle in its present form, giving it its prestigious appearance reminiscent of a religious building. At his death, the vineyard, the cellar and the castle became the property of Pauline Meyer. It is in 1938 that deal with the threat of war, the Meyer family left France....

We deliver bikes to you! You’ve got your bike - now where do you go? When you hire your bikes, you will be given a number of suggested routes together with large scale maps. The routes will always be on quiet roads and tracks and are graded according to terrain and distance. We are constantly adding trips starting at different villages and towns in the area. Some will be suitable for the whole family, whilst others are geared for road or mountain bike enthusiasts. Starting in 2012, a bicycle GPS is available to rent. This has all of the rides saved on it, and will be particularly useful for road bikes that don’t have mapholders.

L'Oulibou is a fascinating place to visit. Only 3.5 km from Mailhac, it produces some award winning oils and olives which can be sampled in the very mill where they have been made. You can also see the whole process that olives go through in order to make them into a wide variety of oils. The 'lucque' is one of the main olives of the Languedoc Roussillon area and it under goes some magical transformation within the walls of this traditional mill. 2 kilometres from Bize, just off the main road between Beziers and Carcassonne, you will find l’Oulibo, a cooperative that produces some of the best olives and olive oils in France. Bize is part of the Minervois region that includes the village of Minerve 10kms to the north which was the site of a famous siege by Simon de Montfort and the consequent martyrdom of the Cathars. Nearby are Beziers (35 minutes) and Narbonne (25 minutes) with cathedrals, excellent markets, shops, museums, and much more...
