The Auberge du Donezan is family run since 2005. The hotel has nine rooms, a restaurant with 30 seats and a summer terrace. A room for bicycles is available as well as skis.

The restaurant new decor, we offer a traditional cuisine with local seasonal dishes and a map of Pizzas (25) over a wood fire. In summer, salads of dandelions (spring), grilled, sauteed mushrooms, are the delight of gourmets...

Cheese specialties such as fondue Volume soared to the country (cheese Monastery "Our Lady of Donezan"), the Pyrenees tartiflette cheese and charcuterie the country, the Supreme trout fillet au gratin are part of our map all seasons. We prefer French poultry and meats: veal, beef and lamb in the country.
  Specialities

The Donezan, Canton of the Ariege are seven small villages full of charm and picturesque, Quérigut, Carcanière, Mas, PLA, The Puch, Mijanes and Rouze. On the road between Axat and Font Romeu, we are just minutes away from Puyvalador - Rieutort and Formiguères. This green area, with peaks rising to over 2300m above sea level, is a delight for nature lovers. Do not forget the passage of the Tour de France including the famous Col de Pailhères which rises to over 2000m was an important (2005, 2007) etappe. This year we will be pleased to see the tour again, the stage will pass through the neck of Pailhière in July...

The Corbières is one of the wildest areas of France with one of the lowest population densities. It is picturesque with wine growing areas alternating with garigue and mountainous countryside. It is located mainly in the Aude département and partly in the Pyrénées-Orientales département. The River Aude borders the Corbières to the west and north. To the south is the River Agly and to the east the the Mediterranean Sea. The name Corbières comes from "cor" a pre-Celtic word meaning "rock" and "berre" from the River Berre which runs through Durban. The eastern part of the Corbières with its Etangs, borders the the Mediterranean Sea and is called the Corbières maritimes. It has its own distinctive climate and characteristic vegetation known as thermomediterranean vegetation...

The Aguzou cave is remarkable for its beauty and its mineral profusion. Unusual visits are proposed in the form of subterranean walks. The first part of the cave (Aguzou 1 on the map) was already known in prehistoric times because of its healing waters. It was developed as a thermal resort at the beginning of the 20th century. A second network of galleries was discovered in 1965. Another 6 km (4 miles) of breathtaking galleries were found, 1500 m (1600 yd) of which are now open to the public. The cave is still absolutely natural: there has been no artificial lighting installed, and no ostentatious arrangements. Visits are organized for small groups only, in the form of an underground hike...

Access : you can find a parking lot at the foot of the castle, on the left of the D 16 at the river side. This campsite is located on the plateau de Sault between Ax-les-Thermes and Limoux at an altitude of 1000m. It's on the Andorra route close to ski resorts. This is a good quality campsite in the village of Roquefeuil. The campsite's shaded pitches are near the Lac de Belcaire (3km away) suitable for swimming. There are 6 wooden chalets that are fully-equipped for all seasons and 17 pitches with electricity and water as well as a camper-van area and restaurant facilities. Campsite open out of season for all rentals subject to prior booking....

Montaillou

Montaillou is a small village in the remote Sabarthès area where Catharism was revived in the fouteenth century. In 1318 the whole village was arrested on the orders of the bishop of Pamiers, Jacques Fournier, who had been the Cistercian Abbot of Fontfroide and who now felt a vocation as an Inquisitor. Exceptionally, he was interested in the truth about Catharism, and he kept records of the interrogations. Even more exceptionally, years later he was elected Pope (Benedict XII) so his records were preserved in the Vatican archives. These records form the basis of a book about the village by Emmanuel Le Roy Ladurie.  The centuries-old church of the Notre Dame of Carnesses, an intimate, warm spot, is idyllically located in the open landscape. The names on the graves at the churchyard show that the people are apparently all descendants of the Cathars. The fontcanal, the most important spring of medieval Montaillou, still works. Today there is almost nothing left of the medieval village, except for the foundations and a few walls. You get the best view of modern Montaillou from the fontcanal that lies very close to the ruins....
