The Minervois is one of the most ancient vineyards of the Mediterranean region. Indeed, its land was chosen by the Romans as providing ideal conditions for the first vines they planted in Languedoc Roussillon. Its name comes from the ancient city of Minerve, a stronghold built by the Romans and dedicated to the goddess Minerva. Since that time, many amphora shards and vestiges of cellars have been discovered, testimony to the importance of this vineyard. The region, austere in winter and redolent with sunshine in summer, has survived over the centuries its invasions by barbarians, Arabs and Christians. The essence of Minervois la Livinière, as in so many Midi appellations, is the blend; a marriage of different grape varieties that adds subtle nuance of flavour to the whole. Natural alcohol level must reach a minimum of 12% without enrichment (so no chaptalisation) and maximum yield is a modest 45 hl/ha. Ageing may be in barrel or vat, and unlike basic Minervois, the wine must be bottled at source, so cannot be sent off to a négociant elsewhere in France...

These are the wines which the French authorities unreservedly allow to be labelled with the grape variety from which they were made. It is difficult to over-estimate the importance of this large and growing category of wines for the future of the French wine trade. The French themselves may have tended to see any Vin de Pays as distinctly inferior to any appellation contrôlée wine, whereas many of their customers abroad see the better Vins de Pays as good-value, user-friendly, sometimes high-quality non-conformist emissaries from the world's most revered wine producer....

The Curiosité de Lauriole is not a place where you can find something to buy or other interesting things, no it's really an insignificant piece of road with only an optical illusion. When we were there for the first time we looked everywhere for something special but did not find anything. After a little search on google we found an interpretation of this phenomenon. What you have to do to find the cache is just to find out the secret of the Curiosité de Lauriole. You can put your car at one of this coordinates and just set your gear in the free and leave the breaks... because of the optical illusion you will think the car goes that direction but it's not!!!

During the months of July and August, Le Maquis is a holiday unique and joyful, often very lively at night, where there is a very friendly atmosphere. You can come alone (e), with friends or family, and be almost certain to leave pockets full address and cool memories. The camping area is spread over two hectares, dotted with trees and shrubs, all sites are shaded. It was concluded to be safe from the curiosity of the herd. Adjoining the site, the area houses the restaurant Feast farmer, wooden tables, a tent, a small stage, a bibliography barter a tree to listen to a selection of sound Maquis emissions. There is also a fleet of bicycles, playground sports (volleyball, badminton, table tennis, etc.), a toy library, petanque, places of business (tent, Berber tent room, restaurant). Everything is in free access, under the responsibility of the campers for animation, storage and maintenance. One way to experience the self in holidays .. Warning period from late July to mid-August is required, we invite you to come see us outside this period if you want to be more quiet...

Using dioramas (original figurines presented in various scenes), the museum tells the story of the tragic saga of the Occitan Cathars. In the 13th century, the catholic princes, spurred on by Pope Innocent III, decided to put an end to Cathar influence in the provinces of Languedoc, Simon de Montfort came to impose the law and the catholic faith in Languedoc by force and fire. The local barons and knights then took up arms to defend their land, their faith and their culture. Following many years of combat, they lost their independence and were forced, in humiliation, to witness the martyrdom of the Cathars under their protection, who were burnt at the stake on enormous pyres...

L'Oulibou is a fascinating place to visit. Only 3.5 km from Mailhac, it produces some award winning oils and olives which can be sampled in the very mill where they have been made. You can also see the whole process that olives go through in order to make them into a wide variety of oils. The 'lucque' is one of the main olives of the Languedoc Roussillon area and it under goes some magical transformation within the walls of this traditional mill. 2 kilometres from Bize, just off the main road between Beziers and Carcassonne, you will find l’Oulibo, a cooperative that produces some of the best olives and olive oils in France. Bize is part of the Minervois region that includes the village of Minerve 10kms to the north which was the site of a famous siege by Simon de Montfort and the consequent martyrdom of the Cathars. Nearby are Beziers (35 minutes) and Narbonne (25 minutes) with cathedrals, excellent markets, shops, museums, and much more...

The Museum of Gallo-Roman potters Sallèles d'Aude dominates the site of what was a truly industrial city. Open since 1992, it chronicles the life of potters and tile makers who for three centuries, mass produced amphorae, tiles, bricks, pipes, dishes and oil lamps. Today, thanks to the past lives again Amphoralis Site. Constantly searching the site Amphoralis rebuilt his Gallo-Roman village in identical traces found. Each visitor is invited to join the construction of the village, for example by participating in the achievement of the mud walls or brick making. It's hands in the clay that everyone experiences the life of Gallo-Roman potters!..
